My family never worried about the water. It was long ago and their bread and pies and cakes and cobblers were perfect! And they never filtered their water. The only thing I ever noticed about my water here where I live is sometimes it's strong smell of chlorine, but that's just sometimes! It's not all the time. I boil it sometimes and sometimes I don't. I'm healthy.

Right. In general, I don't worry about it either. The cities where I have lived have had good water, and I haven't noticed an issue. I do know that around the world, it can be problematic, so I like to address it in case someone is having issues with their yeast. Using filtered water could be a solution depending on the issue and no other changes to the recipe resolves it. Thanks for sharing.

Hi, I used my bread machine to make these yesterday, and they turned out absolutely awesome! Put all wet ingredients in first, followed by the dry. 😊

Do you have any experience with making this recipe with home ground organic soft white wheat flour, ground right before making? Do you know if I need to do any adjustments to any of the ingredients if I use home ground soft white flour?

Hi. That's a great question. I wish I had a tried-and-true response. Although a great idea, I have never thought to grind my own wheat flour. However, I do have an educated guess to answer your question. If the home-ground flour is soft and as fine as commercial flour, I would imagine you wouldn't need to change anything. I think you might be the expert in this area. If you have used your home-ground flour to make other yeast breads, then that flour should be fine for this recipe, too. If you try it, please let me know if it worked or what you changed. Here's another thought, you might add a tbsp or so of gluten (gluten flour) if your flour isn't as fine; extra gluten could help strengthen the dough and encourage a rise... just a thought. I love the idea of grinding your own flour! Thanks for the question.

Hi. You can use bleached flour or even mix them including the bread flour. I often mix all-purpose and bread flours in bread baking depending on what I have, can find, or if one is much cheaper than the other. For this recipe, I think a mix would be just fine.
