If anyone wants to make this vegan, maybe try adding the oil of some antipasti olives :) It usually has some nice flavour too!

I would sautee mushrooms first on medium high heat, they need more surface contact with the pan to caramelize beautifully. Because they continuously absorb liquids I'd start with some water in the pan, as they cook down add oil to crisp up. Then add shallots, continue to sautee and then deglaze with white wine. When you add the tomato paste, I'd try frying it off for a few minutes to get the raw, tinned flavour out a bit. That oil from the cheese is a great idea! To loosen up the sauce/paste, I would take a few spoons of pasta water (which should be heavily salted) and add. Taste, continue cooking until the flavours are developed how you like it. Undercook the pasta just by a few mins. You can add it into the sauce with some more pasta water, and cook for a little longer to combine and the starch in the water will thicken it . And I don't know about you, but I like a lil lemon juice at the end, it brightens the flavour up very nicely. Enjoy, this looks awesome!!!

Holly I actually have a question for you about the mushrooms- I feel like whenever I try to caramelize them, they release so much liquid so quickly that they never really get a chance to caramelize. Any tips for that? Should I just let that liquid evaporate?

I loved this! My husband lived in Italy for awhile, so canned/jarred sauce is outlawed in our house, haha. We're always looking to incorporate more vegetarian meals, so this is great!

This recipe looks bomb! I need to get that umami seasoning immediately. Here is what I would do- sauté the shallots for a few, add a little fresh garlic, then add the white wine (before the mushrooms) and deglaze, then cook that down until the liquid is almost evaporated. Then add a splash of veggie broth and deglaze again..and let that cook down for awhile til reduced by 1/2ish..then add the mushrooms and a little earth balance to bring some creaminess. It would make a super, duper delicious and concentrated base for the rest of the ingredients! Then at the very end I would do a light squeeze of lemon. And maybe some capers..I dunno this recipe reminds me almost of a delicious mashup of picatta and spaghetti which is brilliant! I hope you make more cooking videos because I am so inspired by you right now!

That looks so bomb 🥵 The secret to my own Best Spaghetti You’ve Ever Tasted is taking a couple (a lot) of whole garlic, salt, and parsley and grinding it all together. Then I sautée it with onion and olive oil, add tomato sauce, add ground beef (soy meat is a good alternative for my veggie friends) and letting it all cook together. The secret though is Adobo Goya. Shout out to my Puerto Ricans out there.

I learned a few things from my exes mum who was Italian, I miss her haha! She used the rind from cheese to add flavour in to her tomato sauces, the added the rind until it is soft and then removes it. Also instead of adding any sugar, you can add grated carrot, which adds a sweet element without adding sugar ❤️❤️ I hate sprouts but I’ll be trying this as I’m determined to like them!

love it! i love pasta more than anything!! one thing i do when making my pasta sauce is i buy cans of peeled tomatoes then I quickly blend that. you could try adding some of the blended tomatoes (that becomes more of a sauce/puree) before adding in the tomato paste to let it cook for a second then add in the tomato paste! that would probably give you a little bit more sauce if you were making it for more people or wanted to make some extra to save for another day! sounds like you love your recipe though which is perfect!

This looks great. I like my sauce a little thinner so I cut my tomato paste with dice tomatoes or a can of tomato sauce. Also sometimes I cook my pasta with water and/vegetable broth if I trying to use some leftover up.

White wine in spaghetti sauce is so good! Everyone uses red but I swear white is better. And I’ve found that I like brown sugar in my sauce instead of white sugar. Sounds weird I know. I’m definitely going to try this recipe tomorrow! What do you end up using the mozzarella balls for? There is a Hello Fresh recipe that is baked penne noodles with a tomato sauce and zucchini and sliced fresh mozzarella that’s really really good. It has fennel which is an ingredient in Italian sausage so it gives it a similar flavor and it’s some of the best pasta I’ve ever had.

I'm going to make this it sounds bomb! A tip I recently learned is to use baking soda (just like 1/2 teaspoon) in tomato sauces, it makes the dish sweet by subtracting bitterness from tomatoes. So it's healthier than using sugar, but I also think the flavor is much more refined this way!

Hi Sarah! I personally love cooking and what I eat in a day/week videos. I feel like it would be great for the main channel. I’m not vegan/vegetarian but am trying to significantly reduce my animal product consumption, so these type of videos are very helpful (also any ways I can add more veggies to my diet!)

try turning your heat up a bunch with a good amount of oil (instead of butter, shallots first but high heat with oil) and then put in the mushrooms and season with salt. extra brown mushrooms are TO DIE FOR.

also cook off the tomato paste a bit! it’s real sharp and cooking it in oil before adding your thinning liquid, wine after tomato paste is normally my process, is gr8. add a lil more pasta water with the pasta to cook the pasta in the sauce and let the pasta soak it up!

You could try using brown sugar. I find it has a nice flavor. I'm gonna veganize it and try it - looks really good! I think I'll use nutritional yeast instead of cheese. The brussel sprouts look yummy too!

I like this recipe for pasta: -1 onion -2 cloves of garlic -1 tin of tomatoes -2 tsp pesto -Half a red pepper -Half a carrot -1 chilli (or more if you like spicy food) -Tsp Salt -Pepper -(Blend all this into a sauce) -Add chickpeas/mushrooms/spinach/whatever you like! It’s really good :)

Gurl here is a tip to make your kitchen more Cousy- buy stick on led lights and put them under the upper cabinets, therefore u get extra light and it gives u that cousy feeling) and its easy to assemble😌🖖🏽

I make it meatless too only diff I put some toasted cumin n smoked paprika in then bulk it out with canned drained lentils. I’ve converted even meat eaters to my twist on it. The sugar is important but u know that.
