I guess you'd really only understand it if you've experienced or could detect a difference in the first place. Everything that melts does not do so at the same rate nor have the same textural consistency when it does. Like describing a wine as being jammy. "Well its made of grapes so duh" is a naive response if you think all wine tastes the same.

I'll answer as a cook in a restaurant: They use plenty of exotic ingredients and fresh fruit, and it takes more time to process fresh fruit (washing, peeling, cutting, grinding, making syrups and concentrats) than cream and chocolate. Time is money in the food business. Also, the fruit precentage in asian ice creams (and of course, sorbets) is very high, and low in sugar. Sugar is cheap, fruit are expensive. Also, it depends on the amount of ice cream they make. The bigger amounts an ice cream factory makes, the cheaper it will be. They make plenty of special flavors in small amounts - which, of course, bumps up the price. The overall cost of their process makes the plain ice creams, such as vanilla, more expensive.

Ice cream is the perfect buffer, because you can do things in a somewhat lighthearted way. Plus, people have an emotional response to ice cream; it's more than just food. So I think when you combine caring, and eating wonderful food, it's a very powerful combination. Love from Korea🇰🇷💕

I prefer ice cream that’s more dense and chewy than light and airy. A nice milky, frosty ice cream as opposed to something that’s over the top rich. Also, I want that lychee ice cream. I love the texture they’re describing and I *love* the flavor of lychee. It really does epitomize “juicy”.
