Your recipe is very different than what I was taught by my mother; she was from White House. We stew it down in a cast iron caldron for hours. once the meat is tender, we add, tomato, onion, garlic, thyme, Jamaican pepper, green pepper and salt. Once that's all cooked down, we add some butter beans. Serve with rice and yellow jam.

Welcome, and thank you so much for stopping by! What you shared is how my mother cooked oxtail as well. The recipe that I shared is how my grandmother cooked oxtail, and exactly how I loved it! I personally prefer just the amazing flavor of the oxtail enhanced with herbs, spices and no other condiments.
