Here is my version of Jamaican Oxtail. I have been using this same recipe for years. It's soft, tender, tasty, spicy and oh so delicious! Easy step by step instructions to follow along.
INGREDIENTS- (serves 4) Cooking time: about 2 hours
Season Oxtail with:- (cover & refrigerate- best to leave overnight)
3 to 4 pounds of FRESH OXTAIL
2 TBSP OXTAIL MARINADE (liquid)
2 TBSP OXTAIL SEASONING (powder)
2 TBSP SEASONING SALT (Cool Runnings)
2 TBSP ALL-PURPOSE SEASONING (Maggi)
2 TBSP GARLIC POWDER
2 TBSP ONION POWDER
1 TBSP ALL-SPICE POWDER
1 TBSP ALL-SPICE SEEDS
1 TBSP BROWN SUGAR
1 TBSP WORCESTERSHIRE SAUCE

Cooking the Oxtail:-
2 potspoons VEGETABLE OIL
1 ONION (sliced)
4 - 5 cloves GARLIC (chopped)
HOT PEPPER
Piece of FRESH GINGER
few sprigs fresh FINE THYME (stalks removed/ leaves only)
4 stalks CHIVE / SCALLIONS / GREEN ONIONS (chopped)
1/4 cup KETCHUP
1/4 cup RED WINE
1/4 GREEN PEPPER (sliced)
1/4 RED PEPPER (sliced)
5 PIMENTO PEPPERS (sliced)
1 TOMATO (sliced)
HOT WATER
1 tin LIMA BEANS / BUTTER BEANS
