HOW TO MAKE KETO CARROT CAKE
Carrot Cake is my second favorite cake when I need a keto dessert. First is white cake and then comes carrot cake. I created this keto carrot cake recipe with cream cheese frosting because I needed to satisfy my occasional craving for keto cake. This low carb cake recipe is moist and full of carrot & spice flavor.
This low carb carrot cake is made using REAL carrots. Don’t be afraid of carrots on the keto diet. They are loaded with fiber and vitamins. Sure, they might have carbs, but this keto carrot cake recipe on uses 1 cup of shredded carrots for the entire cake!
I topped my keto carrot cake with cream cheese frosting. This keto frosting has a little extra bite to it because I add some sour cream. You can also use plain yogurt. My favorite keto yogurt is the plain yogurt from PEAK YOGURT. Each container has 24 g of FAT and 4 g CARBS and is delicious on it’s own. Visit their site here: peakyogurt.mys...

KETO CARROT CAKE
(Make 1 single layer 8 inch cake or 1 double layer 4 inch cake)
.cake.
1 ½ cup almond flour
½ cup granulated Swerve or sweetener of choice
¼ cup of golden Lakanto monkfruit or golden Swerve
1 ½ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
1 ¼ teaspoon cinnamon
½ teaspoon nutmeg
⅛ teaspoon ground cloves
1 cup loosely packed grated carrots (from one medium sized carrot)
4 eggs
4 tablespoons butter, melted
½ teaspoon vanilla
½ cup chopped pecans
.frosting.
8 oz cream cheese, softened
5 tablespoons butter, softened
1 tablespoon sour cream or plain yogurt
½ teaspoon vanilla
½ cup confectioner’s Swerve
Grease the bottom and sides of one large circle cake pan or two 4 inch pans. Line the bottom with a circle of parchment paper.
Whisk together all the dry ingredients.
Add the carrot, eggs, butter, vanilla to the dry ingredients and mix until combined.
Stir in the pecans.
Scoop batter into prepared pans (fill halfway). Bake at 350 for 22-30 minutes. 22-25 minutes for 4 inch pans and 25-30 minutes for 8 inch. Bake until set in the middle.
Let cool completely before frosting.
For the frosting, whip together cream cheese, butter, vanilla, and sour cream. Slowly add in the confections Swerve and continue to whip for another 2-3 minutes or until fluffy.

I tried this cake and even halved your recipe. Used walnuts. It was delicious! I was able to cut the cake in half and make a double -layer frosting. It almost stayed in the oven too long at 29 minutes... one of the best keto cakes! Oh, I don't use swerve, but used 100% monkfruit by Julian Bakery.

Thank you for this recipe. My Fiance has been craving carrot cake and this really hot the spot. So freaking good. I added 1/2 cup of Lakanto golden sweetener instead of 1/4 to the cake, and I actually think it could have used a little more for our sweetness needs threshold, but the texture and crumb are beautiful. I used macadamia nuts instead of pecans because I absolutely love macadamia, and they worked perfectly. I'm likely going to use this to make cup cakes next time.

OMG!! SO YUM! so easy to follow too! My batter ended up being a bit more liquidy than yours looked but it didn't matter in the end because it came out amazing! I used a 9 x 13 pan and cooked it for a bit longer like about 40 mins. The icing was my favorite keto icing by far!! and im not a huge icing person even before keto. I would suggest for folks who make with a 9 x 13 to reduce the amount of icing you make because i ended up with leftovers (which is fine i just used it for lemon cupcakes i made the next day). Anyways 5 stars & I'm subscribed now!

I made this tonight but I made a few changes. I used Swerve brown sugar instead of the golden swerve because that is what I had. I also did not use cloves as I don't like them but I might try ground ginger next time. In the icing I added a little bit of almond milk to thin it down as I thought it was too thick. I also used a teaspoon of vanilla. And as I used erythritol confectioners and didn't want that cooling effect so I used a bit of liquid stevia with monk fruit to counter act it. This was amazing!! Absolutely delicious. I am going to try to freeze some of this and see how it fares. I will make this again for sure. Thank you so much!!

Yes. Using parchment on the bottom of your pans with any keto recipe in baking is KEY. Otherwise the baked goods do not fall out of the pan. Looks delicious! Definitely going to bake this!! Btw...4 inch cake, too cute! My hubby would eat this in one sitting. No joke.

I was hesitant & nervous to try this out since I’ve never baked before & I was a bit skeptical about this recipe since I’ve had a few keto products that weren’t good at all. Well, I’m glad I gave this a try! It was relatively easy to make (although ingredients can be pricey). It was an instant hit for my dad who isn’t on Keto & hates cakes in general. Thank so so much. I doubled the amounts, added one cup of dark brown sugar + 1/4 of the golden one and two slices of pineapple (chopped). It turned out super, just as the ones I make with wheat flour. The sweetness is definitely less since I lessened the sugar.
