I make these using melted coconut oil - they turn out perfect - [other variation is omit blueberries and vanilla extract] instead add 1 tsp of Lemon Extract and 1 1/2 Tablespoons Poppy Seeds- I have also made Poppyseed Blueberry muffins by adding a few blueberries - best muffin recipe ever - never DRY - always moist - Thank you for this recipe

I just made them and added lemon juice and lemon and coconut glaze on top. Used Canola oil instead of butter. Mmmm, everyone loved them, it's a keeper. Thankyou so much🥰

@@OmaidaRin88 erythritol is not a good option for everyone,as it doesn't increase the insulin levels but the down side is ,it creates bloating and gases .

Thank you for the recipe, just made them (half of the recipe) and they rise beautifully but then dropped when taken out of oven :( Taste was alright, really. However, I did switch some ingredients : erythritol instead of monk fruit allulose, coconut oil instead of butter, 1 large egg instead of 1.5 eggs, and I used frozen mixed berry (blueberry has very high net carbs!) Following your advise of not thawing the frozen mixed berry, my muffins were very wet on the inside and didn't seem like they can hold it together. I've adjusted the oven temperature because 175°C just burn the top, so I lowered the temperature on the last 10 minutes. The top got brown very quickly with high temperature and the topping of mixed berry easily turned ugly dark. Aside the texture was wet I could also taste something tangy, could it be the baking powder that's too much?

It sounds like the multiple changes you made caused issues. There is definitely a big difference between erythritol and Besti. Coconut oil is fine to substitute for butter, so that's not a problem. The recipe calls for 3 eggs, not 1 or 1.5. Mixed berries will definitely be too wet. Just frozen blueberries are okay to use, but other frozen berries have higher water content. In addition to the other issues, if they deflated then it sounds like they were not baked for long enough. I hope you get the chance to try out the recipe as written as this will avoid all those issues.

I tried this one and I'm not sure what I did wrong, but it was super dry. I tried to add more milk and that helped but... The end result was okay, but just. Very dense and crumbly. Just weird.

I’m in the U.K. and baked these using your metric conversion from the website, and used regular allulose because I can’t get the brand you mentioned here. I’m an accomplished baker but these turned out absolutely terrible. Over browned and bitter on the outside before the centre was properly cooked and almost zero sweetness. A huge waste of massively expensive ingredients. Allulose costs a fortune here. Might work for Americans but definitely not here in the U.K. I guess there’s something very different in our ingredients or something is not right with your metric converter. So disappointing 😔

Hi Anna, unfortunately plain allulose and Besti are not interchangeable - Besti is sweeter, which is why your muffins were not sweet enough. If you use plain allulose, you'd need 30% more. You can sign up here to be notified when Besti is available in your country : wholesomeyumfoods.com/international-notification If your muffins burned before they were done, your oven might run a little hot and you can bake them at a slightly lower temperature, or tent the top with foil once they are golden enough to finish baking.
