Cold, dull Monday, I’ve decided to make this Lamb Hot Pot it is on the go today. Working and I keep on checking in on the lamb the Kitchen smells amazing. Celeric ready to top this too. 👍

My Gran used to use lamb neck and would also add lamb kidney to her Lancashire Hotpot plus carrot and onions. Comfort food for sure. I like the idea of using celeriac instead of spuds, will have to try that. Not convinced on adding celery though. :D

this looks amazing. do you think i could do this all in a regular stainless steel pot (like one you boil pasta in), or would that ruin the pot and/or the recipe?

I don't recommend baking in a saucepan, but any dish that you can use for a lasagne or Mac and cheese would be great. A cast iron pot will last a lifetime however, in fact you'll leave it to your family after you've gone, so they're a good investment.

I know from the Lancashire Hot Pot that my son doesn't like lamb. He was delighted that I was cooking a classic from Lancashire (he loves going there on vacation). It was a huge pot and we cooked it together. Then the moment when he takes the first spoonful and says “sorry, I don't like that meat”. 😂

That was the last dish that I prepared for the missus, before I was banned from using "her" oven. I was admonished as there was other stuff that needing eating first. It had absolutely nothing to do with the fact that I was born and raised in Lancashire and she (who must be obeyed!) Oberstleutnant, Big Mother, is a Yorkshire lass. So bloody protective and parochial about her culture that she won't even eat Lancashire cheese.

I am fully in support of keeping the war of the roses going. Just had to look up Oberstleutnant ? The world's best cheese comes from Somerset, so you should compromise with a lovely mature Cheddar

Hmnnn thats not how my old grandma made it. She put meat on bottom. Then layer of onion then layer of potato and repeat these layers all the way up to the top of a very deep pot. Last layer being potato. All cooked in oven for quite some time. Lid removed towards end of cooking time to crisp up the top layer of tatties. Yes of course stock and Worcestershire. So the many recipes i see don’t match up at all to my old mums and grandma’s or great grandma!
