The BEST Matcha Mochi Brownies

When you mix two desserts into one, it only gets better 😏 This treat has the consistency of a chewy, bouncy mochi and the crunchy, flaky top of a brownie. Did we mention the sweet, umami matcha flavor is the best part? 🤭
Ingredients
- 2 tbsp Matcha.com matcha powder
- 1 cup water
- 3 1/3 tbsp unsalted butter
- 2 tbsp vegetable oil
- 2 1/4 cups glutinous rice flour
- 1 cup sugar
- 1/2 tsp baking soda
- 1/8 tsp salt
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350F
- Line a 7x7 or 8x8 inch square pan with parchment paper and set aside.
- In a small bowl, combine melted butter, oil, and matcha. Mix until smooth.
- Add water and mix. Set aside.
- In a large bowl, whisk together glutinous rice flour, sugar, salt, and baking soda.
- Add the wet ingredients into the large bowl, and mix well.
- Incorporate eggs and vanilla, and mix until the batter is smooth.
- Pour the mixture into the lined square pan.
- Bake for 45 minutes. Allow to cool, then cut into squares. Enjoy!
