Ingredients
For the Salad
3 cups (300 grams) Pasta, small size, uncooked
1 Medium Yellow Bell Pepper, cubed
1 Medium Red/Orange Bell Pepper, cubed
½ Red Onion, finely chopped
¾ English Cucumber, halved and sliced
1 cup (200 grams) Cherry/Grape Tomatoes, halved
½ cup Pitted Kalamata Olives, halved
1½ cups (200 grams) Feta Cheese, crumbled
2 tbsp Parsley, finely chopped
For the Dressing
¼ cup Red Wine Vinegar
½ cup Olive Oil
1 tsp Dijon Mustard
2 tsp Honey
1 Garlic Clove, finely grated, minced
½ tsp Lemon Zest
½ tsp Oregano, dried
Salt & Pepper to taste
