I was fortunate to be a Thanksgiving dinner guest this year. Shortly before we all departed, my hostess asked if I would like to take home dark or white meat. How generous of her. I told her, a very good friend, what I would really like was the turkey carcass. She laughed and said she was just about to put it in the trash.! It was rescued and went home with me. The very next day, I turned it into 10 quarts of delicious, rich stock. My freezer is now filled and I am ready to make soup very similar to yours. I have missed seeing you - how lovely to have you back! Please don’t stay away so long next time.

I did that this year. Made a soup from the leftover Thanksgiving turkey carcass for the first time. It was so good. Richer than chicken soup. Definitely want to pile on here and encourage anyone who hasn’t tried it to give it a shot. Better than days of turkey sandwiches too. And the roasted carcass just adds color and depth to the flavor. Can’t wait to do it again.

My family and I don't even need to be sick to enjoy a nice chicken noodle soup. I love making it on cold, fall/winter days. I may even try adding ginger, turmeric, and parsley to mine as I never thought about that.

Parsley is a must, even if dry chopped from jar. I've never tried turmeric or ginger either but will try. Another must is dry bay leaves. Just take out when done. Looks great but sure needs more broth I think.

Wonderful!! When ever I make soups or stews of any kind, I NEVER peel my carrots. I have tested over the years, and when carrots go in unpeeled, the flavor is SUPERB and SO much better!! I never peel carrots anymore for anything. Blessings.

You can never go wrong with chicken noodle. There are all these recipes for fancy/artisan soups but when it comes to a classic? can't go wrong. I keep a bag in my freezer collecting chicken bones. When it's full and I have a day off: into the pot it goes to gently simmer for the day. Out it goes into the mason jars for the time needed.

I always put tumeric , ginger , garlic and Italian seasoning mix in my s chicken soup . Instead of noodles or rice I put cubed potato in it . I make for where people get sick or have a surgery that way they can have something nourishing to eat

We have the same recipe! If I have homemade stock , I’ll use chicken breast. If I need homemade stock, I start with a leftover roaster chicken, carrot, onion and celery to make a double batch of stock. If I am feeling sick, I also add cayenne pepper. If I’m not, I’ll add in fresh mint.

I enjoy homemade soup as well as the next guy, however, sometimes it is nice to have Campbell’s soup to add to the pantry supplies. Campbell’s Soup supplies jobs, tax bases, and assistance to busy moms with a bunch of mouths to feed fast. You are a great chef no question, you don’t need to dump on others. Both sources are needed. I am a terrible cook but somehow I have lived to an "advanced age". Occasionally I discover a recipe that looks interesting and I try it. This one did and I made the attempt. Without a doubt it is the best chicken soup I have ever made! I put containers in the freezer and one container provides three servings. As the soup is heating I cook the pasta or barley or whatever I decide to use separately and add it at the end. (Its nice to try different things and sometimes I don't add anything.) Thank you for posting this video!

I would make huge pots of chicken soup and freeze batches of it. But I put potatoes in it instead of noodles. My mother-in-law was living with us at the time and if I was running short of time I would serve that. She loved it and it was a complete nutritious meal for her.

I love this soup. My dear Granny made it in the cold moths almost every week. We loved it! The only few differences my Granny did was using potatoes instead of noodles and adding parsnip. Frankly autumn and winter without this soup aren't fun at all. 😁

If you have the time and no broth here's how I make it: Carrots, Celery, Onion, Parsnip, Leek, Thyme/Parsley tied together, garlic, a few peppercorns, bay leaf, Leftover roast chicken carcass (leave some dark meat on) and cold water to cover in a large soup pot. Place a sauce pan on top of all that to hold the ingredients under water. Bring to boil then reduce to very slow simmer (a bubble here and there) for 6-8 hours. Resist the temptation to boil as that will emulsify the chicken fat into the water and cause your soup to be cloudy. Skim the chicken fat and add more water periodically. Discard all as they will be mushy. Makes a great starter broth

You Tube didn't tell me that you had a new vid out like they're supposed to. I was so happy to see you again. You're right about home made soup being better than canned but when I'm sick, I'm really not up to making a pot of soup and waiting. I just open a can of soup doctor it up w/ garllic, ginger, pepper and lemon juice and nuke it in the microwave. Thanks for your recipe though. It looks really good.

This soup is done quickly and easily. I roast carcass bones and slow cook stock for at least eight hours. My go to for sickness is matzoh ball noodle soup with parsnips, carrot and celery. An italian soup I like is with chicken, stellini (tiny star) pasta, parsely, carrot, celery, basil, oregano, olive oil and lemon. And of course the Mexican version of Caldo de Pollo I grew up with. I would be delighted to add your soup to my list. Cheers!😊

I always have chicken soup on hand. Made from scratch, including the broth. I recently started feeling like I was coming down with a cold, so I fasted and only drank chicken broth for two days and the cold never progressed into anything. It was amazing. Now I'm eating the soup part, which is always great for the winter months. Mine is a lot like yours. Great recipe.

Some winter hardy stews would be appreciated up here in the cold, white north. Oh Canada! I love soups and stews, anytime of year. Add a good hearty bread and your all set. Cooking for one is a drag, so I'd rather toss things in one pot and make stew or soups. Then I can freeze various serving for later.

Darren, thanks for sharing your soup recipe. A hint...if you want to make your chicken soup taste like Campbell's: try using Cornish hens instead of chicken. You'll find the flavor much like Campbell's.

There really is something to be said about the powerful smell of chicken noodle soup when you're not feeling well. Great recipe as always, Darren. I use packaged egg noodles. But, if I have them on hand, I really like to use Reames brand frozen egg noodles, instead, because they're the closest to homemade without me actually taking the time to make them.

I add to my broth the following; a lit bit of chopped garlic, cubed chicken broth, poultry seasoning, some butter and anything else I see in my spices rack. You can research typical seasonings for chicken dishes to find more.

I so agree with Chef Darren. . . . canned soups are horrible with all that sodium. I grew up with the Lipton dry soup mix (Chicken Noodle) and I actually hated it because too my child like palette, it was TOO peppery. I definitely want to try his recipe (but I'll use less carrots). The only canned soup I'll eat and only when I need it as comfort food is Campbell's Tomato soup, but I make it the way my mother did: using 1/2 a can of water and 1/2 a can of milk, instead of a whole can of water, so that it was more like a cream of tomato.

Loaded chicken soup is the best. You have to put the celery, carrots and onion in. The flavor is incredibly. My family prefers it when I make chicken vegetable soup. I shredded it like you. Usually I make the noodles separately, so that they don't suck up all the stock.
