Our annual trip to the Chitina area to fish the Copper River for our Sockeye Red and King Salmon. This type of fishery that Alaska allows its residents to harvest in this kind of way is an amazing thing to be a part of. This is less sport fishing and more filling your freezer for the year. A lot of people who live in more remote places of Alaska (then we do) depend on this to help get through the long winters. Some use it for their dog teams and some use to share, barter and trade.
It’s an amazing experience that I wanted to share with you guys and gals. Hope you enjoy!

Kris DeVo’s Smoked Salmon
Recipe is for 10 Salmon or 20 full fillets
10 cups soy sauce
10 cups water
10 cups brown sugar
1 orange zested
1 head of garlic minced
10-15 quarter size pieces of fresh ginger
1/3 to 1/2 a cup of Simply Asia sweet ginger garlic seasoning (optional)
Mix together well and brine Salmon for 8-12 hours. Keep the fish in the brine in a cooler of ice or in the fridge. Can substitute some water for ice when placing in the cooler as well.
Pull salmon out of the brine and pat dry or rinse with cold water. Both work well but I prefer to rinse and pat dry. Place salmon in a cool place to let the surface dry and glaze over. 3-6 hours. You will see a shiny sticky surface when it is ready for the smoker. Smoke with your choice of smoker and wood. I use charcoal, cherry and apple wood. Make sure charcoal is up to temp and fired off before putting in the smoker.
1 hour at 120-140 degrees with light smoke
Then smoke at 140 to 160 with medium to full smoke for 2 hours
If canning then you can go to the canner from here.
If not canning finish smoking at 165-175 for around 1 to 2 hours till done. Basting with maple syrup or something of your choice helps if you are not canning and going for a finished product.
Kris DeVo’s Canned Salmon
Follow smoked salmon recipe. Skip the last step of smoking at 165-175 until done if canning.
For each 1/2 Pint jar:
1 Garlic clove
1-2 slices of Jalapeno and or 1-2 slices of habanero (remove the seeds on the habanero). 1 slice of jalapeno adds lots of flavor but is not really spicy at all. I add a thick slice of jalapeno and 2 good slices of habanero for a medium spice level.
1 dash of peanut oil (or olive oil)
Peel the skin off the salmon and debone only the large bones in the thin sides of the belly. The smaller Y bones will become so soft you won’t know they are there.
Add salmon into the jar in the largest pieces as possible and stuff firmly till salmon wants to fall apart.
Leave 1/2” head space in the jar.
Get canner going to full steam for 10 minutes. Place the bobble weight at #10LBs and let canner build to 10psi. Then let run at 10 psi for 100 minutes. Turn off heat and let cool till no pressure is left and remove jars. Let cool and enjoy! .

Smoked salmon reminds me of my dad. He taught me how to fish, camp, cook and to enjoy the outdoors. I miss him. Thanks for the clip and the trip down memory lane.

Smoked Salmon was a special gift from my ex sister-in-law. She would send me cases so many years ago. Above and beyond what she would need for the family. She would catch, clean, marinade, smoke and can right off the banks. Was the best tasting fish I'd ever eaten. Excellent video and so happy for you.

What a well done video. Loved the trip prep, river adventures, (the fishing was great too) but the fish processing and cooking were total surprises and bonuses. The smoking and canning were done so well. Felt like I was watching someone who has run restaurants and commercial kitchens in another life. Thank you for producing and sharing this great trip. I'll get to Alaska some day!

Smoked salmon. Even if a single fish was not caught, it would have been worth the trip. The beautiful scenery was unbelievably fantastic, the fish were just icing on the cake.

Smoked salmon from the Copper river in Chitina Alaska. We camped in a wall tent near McCarthy in 1980. We hiked up to see the old copper mine structures. The Kennicott glacier late in the night gave off an alpine glow in the sky. It was a magical time for me - 22 years old and new to Alaska. Lived in Alaska for many years before heading for warmer weather. Love the video. True modern Alaska adventure.

Smoked Salmon. Dude! I lived there in Nenana, AK from 2007 to 2010 and made the Coper River dipnet trip 1 time. Most memorable fishing trip of my entire life. I was glued on this video so bad... I wanted to cry. Thanks for this video too bro! I could smell it from here down in South Carolina. Remember... if your going to smoke, please smoke Salmon!

Smoked salmon. My father in law who is up in years spent 13 years in soldotna paving roads along the chain. He tells me of fishing and hunting stories that are just unimaginable. He said that if I were to visit, I would never leave. Thanks for the awesome footage.

SMOKED SALMON!!! I’ve always wanted to dip at Chitna, but haven’t broken my South Beach Kenai habit yet, but do miss my Sub Net Bristol Bay days of putting fish up for the year!! Love that cutting board you have for your Camper and if you sell them I need to buy one, gorgeous board👍 I’ll give your recipe a go, but like all Alaskans, we have our own special recipe!! Kudos to you for sharing!!! I’ve never understood the take my recipe to the grave mindset, unless you own a restaurant……… Sharing is love and we need more love in this modern life!!! Ron in Wasilla!!

I loved watching you create your beautiful boards but this video was fantastic! The scenery was absolutely breathtaking. My husband loves fishing but he has never been fishing in Alaska. It was so interesting to watch you processing the fish, so many different ways, I could almost smell the salmon cooking! My taste buds are going crazy! Thanks for this video, I really enjoyed it.

With out a doubt Alaskan salmon is the best in the world. Just the most abundant salmon fishery and subsistence fishing is awesome. Enjoyed seeing the fish in the smoker.

Smoked salmon was gifted to us at our wedding 40 yrs ago. It was so delicious I had never had it before. My husband's Aunt gave it to us. I really enjoyed the video!

Smoked Salmon is a treasure that a lot of people will never try because they don’t like fish. That leaves more for people like us that love it! Thanks for taking us along on your trip! We used to go to the kewanee river in Wisconsin and catch king salmon coming into spawn. Those were the days! Thank You!!

Smoked Salmon - watching this makes me miss when my pops would tell me stories of him dip netting and would ship freshly caught salmon home from alaska. cheers!
