I would have to agree with you on this being one of the best cooking channels. I grew up watching Julia Child, the French Chef on tv. I like watching Sonny just as much. And of course Gordon Ramsey and Chef Jean-Pierre. You’re still the best of the lot, Sonny!

Yeah, he's probably my fave right now. Honestly, his dishes look better than Gordon Ramsey's. Gordon adds way too many herbs and it just gets ridiculous at times.

I made this yesterday and lord it was absolutely amazing! I couldn’t find garlic scapes for the pesto from any of my local supermarket, so I substituted it with a bunch of chives, and the pesto came out awesome. But by far, my favorite was that white wine sauce! It paired so nicely with the scallops. The cauliflower purée, also amazing. Honestly everything was amazing and just paired so nicely with each other. And the final product, when done properly, does look extremely professional!

Man, I really prefer this Sonny. Reminds me of pre-tiktok Sonny. Just cooking, not gimmicky, (almost) no yelling, (almost) no beating up appliances. I know people like that stuff, and it's often funny. But in my opinion, it's so much better when your videos focus on the cooking instead. Great stuff! Keep it up!

Dry scallops are typically soaked overnight. Try to find a scallop that was frozen at sea or a chemical free scallop. When a scallop is soaked and then cooked the protiens and flavor is flushed out. Scallops are soaked to give them a longer shelf life and to make more money. Looks delicious

I work at a winery and we have a huge garden. I use scapes all the time. The way that you saved the milk reminds me of how we save the poaching liquid from our cranberries to make ice cream toppings

Great job!! Thank you for showing me how to cook some scallops in a great way!! When I was stationed in Japan I met a Japanese woman who's mom taught the wives of doctors how to cook traditional Japanese meals. She made scallops in an anchovy sauce and served it with cauliflower. I cannot replicate it but it was awesome. Tomiko Morita is her name.

If you do a quick ~2 second blanch of the basil leaves then dunk them in an ice water bath before using them to make the pesto, the pesto will stay bright green.

Don’t have garlic scapes local, so I opted out of the pesto and purée. Instead, I put pasta in the sauce then added the dill. Was great!

Dude, my friend knew a diver that harvested only giant "pie plate" Sea Scallops from the cold, deep water of the Gulf of Maine. The meats were the size of golf balls. I cooked them on the grill with just a little teriyaki splashed on them. They were the most succulent scallops I have ever eaten in my life! I live on the Eastern Seaboard so I eat a lot of seafood . Nothing has ever compared (except maybe fresh Yellowfin tuna caught that day).

You can bake the cauliflower in butter and then add the milk. You get much more taste.
