My Aunt use to make scrambled eggs in cast iron skillet. Always would add butter before the eggs then use a spatula ( the day before silicone) an fold the eggs. No wonder I loved her scrambled eggs so much. The only way I can get her results is whip the eggs in my mini blender with Spike. Put melted butter in a grabit bowl and Microwave for 30 second increments moving over with a fork until almost set. Comes out pretty much the same. Must be good as my grandson would always ask for them all the time.

I have a pan and spatula specifically for eggs. Nothing else touches that pan except butter and eggs. I always salt and pepper my eggs raw and add heavy cream. Sprinkle a little shredded Dubliner at the end, perfect!

Add a rounded teaspoon full of good Kosher horseradish while you're mixing the eggs. Keep everything else the same. Your eggs won't be horseradish hot, they will be tasty awesome! Trust me on this. My mother learned this from her grandmother.

For omelets use water instead of milk. Instead of constant folding add filling after 2 min lower temp and just one fold over let it set then flip for a minute.

I add 1/4 teaspoon of baking powder (per egg) and use the Nutri-bullet blender. Cook them on low to medium-low to give the eggs time to lift and get airy. Eggs are entirely homogenized and so light and fluffy, almost like a souffle.

If you want the FLUFFIEST eggs ever…. Whip the eggs up like you did with the same ingredients (minus the salt), and put them in a low to medium heat pan buttered like you did. But here’s the thing. From the second the eggs hit the pan until they’re done keep whipping them with a rubber spatula or whisk. Take them off the heat when they ALMOST look done. The residual heat will do the rest. NOW you’re looking at the fluffiest scrambled /whipped eggs you could ever imagine. It’s a little work and takes more time but OMG. You’ve gotta try it. Btw we made our GO TO Jeffey’s instant pot spaghetti and meatballs last night. Perfection!! Tomorrow will be the pot roast with the pepperonchini. You Rock, Jeffrey, we love your recipes! 😊

Love this! There is a trick to scrambled eggs, I use milk but have not tried the heavy cream. I am definitely trying this! I remember Graham Kerr saying that if you add milk to make scrambled eggs, they'll come out watery. If you use water instead, they'll come out perfectly. Yours look delicious and perfect!

Do you know about "The Trick" to get unwanted egg shells bits out after you cracked them? Just use the remaining egg shell half and for some reason will be much easier than trying that balancing act with a spoon.😢

Make a cornstarch slurry of about 1 teaspoon cornstarch in 1-2 teaspoons of water per egg and you'll have the creamiest eggs ever. Try it! You'll never go back.

I can always tell how well someone knows food when they make eggs. Warning. Never put salt on raw eggs. Just wait till they cook and then put the salt on. Salt breaks down eggs and can make them watery. FYI

Salting eggs just before cooking can affect the color, but not the consistency or viscosity. Salting eggs 5 plus minutes before cooking will indeed start to break down the proteins and make them watery, (think dry brining a steak). Don’t believe the old wives tales, feel free to salt those eggs in the bowl right before placing over the heat.

The only type of scrambled egg worth eating, in my book, is with matzoh - and cooked in a frying pan. I add a splash of soy sauce to the beaten egg to give flavour; otherwise a good 'pat down' with Marmite has a similar taste. :)

In my opinion you completely ruined those eggs. They were definitely way overcooked, likely over too high of a heat judging by how quickly they cooked, and the folding technique combined with overcooking resulted in large and small / unevenly sized and varying cooked pieces of egg. Jacques Pepin can show you how to scramble eggs, if you're curious, and he's on youtube. THAT is how to do it.

I have been cooking scrambled eggs since I was 5 years old, you just need some nonstick oil or butter, then you crack the eggs scramble them up either in a bowl or in the skillet and season to your liking. In fact, adding Dairy to eggs is not a good idea, but it's a nice cheat for omelets.
