I've tried his exact recipe on two separate occasions. It's 100% the absolute best beef stew I've ever put in my mouth. I almost want to stick my entire head in the pot and eat it from the bottom up. Believe him. It's truly amazing.

One suggestion, start by browning the meat (in batches) and reserve afterwards. This will create a fond on the bottom of the pot. When you add the veggies and liquid it'll deglaze and give you lots of flavour to your final dish before adding the meat back in and continuing with the recipe.

works great. i love that it has stainless steal pot inside kzbin.infoUgkxG-7WiT7ocumjytOpHDFt632PL0pxXRAg and not the one with coating. we used to have a coated pot before, and the coating slowly peels, and i am sure went into the food that we cooked. Absolutely love stainless steel, and will not use a coated product again.This pot has many settings and many buttons, and i need to sit down with a manual to figure out which setting to use. I used the basic functions, and even though i am not technologically skilled, i turned it on and assembled it without any help.Very satisfied with this product overall.

For a bit of texture, I’d add a cup of frozen green peas at the same time you add the au jus. They will quickly thaw, and give you a nice pop when you eat them. Adds a nice color to the dish, too.

Jeffrey: Upfront I have to confess that I have probably made a dozen or more of your recipes. Most are very, very good. With this one however, you knocked it out of the park. Without question the best thing I have ever made. And like most stews, soups and casseroles, it only gets better with age as it works it’s magic in the refrigerator. I just finished making a batch and we're going to have it tomorrow night. Because my Starfrit pot has a non stick surface, I seared the meat in a stainless steel skillet. After transferring the meat to the liner I sauteed the onions, celery and garlic in the skillet. Then I added the tomato paste and wine and broth with rosemary and thyme and the pan deglazed beautifully. Thank you Jeff for your entertaining and helpful videos!

Dallas, TX, expecting a "winter storm," which to us is a couple inches of snow or sleet. Anyway, I made this tonight, and it was the richest, most savory beef stew I've ever made. I loved the addition of mushrooms. My husband has a terrible sore throat tonight and he literally moaned at the beefy warmth on his throat. Bought one for my family and another for my parents as Christmas gifts. This stew was my first time using it. Followed to a tee with great success ! Wife and daughter loved it as did I. Took a batch over to my parents for their dinner tonight, then spent an hour with mom reviewing how to operate it, then giving her a KZbin demonstration/tour of the Pressure Luck page. Next time, open both sides of the tomato paste, but leave one lid on. Use the spoon to push the lid through the can to get it all out in a fraction of the time :)

Add tomato paste to pot before adding liquids and cook a little. It brings out the flavor of the tomato paste and enhances your sauce. Same when making pasta sauce. Leave one end, after opening, on the tomato paste can. Use it to push paste out cleanly.

I made this recipe just like the video the first time and second time I did your tip and I agree I could taste more of the paste. I did some other tweaks too - added in some chipotle powder and a little cayenne pepper powder with the juice of half a lemon. Added some good complexity and spice. Thanks for the tomato paste tip.

Instead of using less liquid, just use a couple of teaspoons of cornstarch and put it in right after you take the lid off. I like the gravy the best so I always make sure there's plenty.

I made this for dinner tonight. I didn't have fresh mushrooms, but I had a small can of mushrooms in butter sauce that I added instead. In Australia, we do not have "au jus" so I hit google and found it to be the equivalent of our "roast meat gravy" so I added a pkt of that. Served it with italian crusty bread. It was sooo good & full of flavour. My dad isn't a huge fan of beef stew but even he liked it. Everyone else loved it and the whole pot was gone after everyone came back 2 hrs later and had more. I am definitely keeping this recipe. Thank you so much.

I would add a few things to this: 1) Agree with Craig Stephen below about creating fond. HUGE flavor difference in the meat. 2) Might need a bit of cornstarch slurry. 3) I would also add just a TINY bit of Kitchen Bouquet or if you have a Caribbean market or live in an area with a sizable Caribbean population (Publix may have it), a few drops of Grace Foods browning. Gives a really rich dark brown color. Pearl onions would be good too, but use the frozen ones. Fresh ones are a bear to peel.

So I tried this tonight. I did one thing different and that is I browned ONE SIDE of the beef first for the Maillard reaction while leaving most of the meat raw to be cooked as per usual. The only suggestion I have is to cut the rosemary and thyme in half at least. Unless you really, REALLY like the taste of Rosemary. 1 tsp overpowers everything else. For those who think that 20 mins isn't enough time in the pressure cooker, the timing is perfect just as he describes. The carrots and potatoes were soft, but not mushy unless you mush them on purpose. The beef was the same. Not falling apart (which isn't good), but tender enough to cut with your spoon. Provides the perfect texture you want in your mouth.

When u season it. Dont measure. Just do a sprinkle i dont pay attention to measurements. With the flour.. he said a quarter of flour. Just add flour enough to coat meat. Dont worry about measurements period.

Your comment about whether people like mushrooms is really important! I HATE the texture of mushrooms but they give an amazing taste to beef. I blitz any mushrooms I add to a beef dish - all. the earthy flavour without the slimy texture I hate about 'rooms!

Another suggestion, for people who don't like mushrooms (texture-wise), use dried mushroons and grind them up into a powder in a spice grinder to add tons of flavour. I love beef stew with doughboys on top though I don't use beef much anymore, it's become too expensive, so I use pork shoulder instead.

Finally! You taught me well because I came up with my own recipe (since I couldn't wait forever) and it's very similar to yours expect I do it Cuban style using cumin and oregano. I'm going to add the flour next time and make it a little thicker. Your cookbook is invaluable to me! Can't wait for your next one!

I have made this numerous times since I discovered your video. Each time it is a HIT!! with kids and adults all alike. I even froze a portion and thawed and served it a couple of weeks later and everyone thought I had made it fresh that same day. Ha!! It is simple, easy with basic ingredients and QUICK!! please give some simple and easy and quick dessert recipes. Like perhaps using Boxed Cake mixes and adding cream cheese, etc. to make unique cakes or brownies/blondies. just an idea for ya :)
