I made this last night for dinner. Excellent! I did change it up a little by using butter for the roux, because I didn't have vegetable oil, and I added andouille sausage.

Brah you made that look so easy. I usually just throw my uncooked shrimp right into the pot during the last few minutes to cook them, but I like how you did in a separate pan with butter. I’ll try your way next time.

Great job, looks delicious. Just want to point out that a Roux is made from Flour and Butter, not oil. Switch the butter and oil in your recipe and you're golden. Butter for the Roux and cook the shrimp in the oil.

I made some in the oven, and it turned out dark brown. I use it for gravy, too. It took 2 hours to get brown.

@AllWingsEverything I got about 2 cups of flour and just baked it until it got a coco color. I put it in a tight container. Whenever I need gravy I just saute my onions in oil and add the flour mix. I don't know the name of it. It turns out very good in roast or chicken.

Cajun/ Creole seasoning gets confusing. Cajuns are from Quebec far up in Canada. When they made their way down to Louisiana there was already a Creole culinary tradition here. There was a big marketing push in the 1960s to rebrand those Creole dishes as Cajun.

ohhh. This is the recipe that I'm going to try tomorrow. I've still not found *the* recipe that makes me says, "Yes!", but I'm hopeful that this will be the one. I'm not making shrimp stock this time around as I have to rely on frozen shrimp. Frozen shrimp shells make stock that taste like it has freezer burn (I live nowhere close to the ocean) so I'll just use some homemade chicken stock. I once used a bottle of clam juice as a couple of recipes suggested - 🤢. It was not good.
