Just went to Keller Texas. My father lives out there. It was unbelievably hot, brace yourself. Great video! Love that smoker!

Oh it was definitely hot. Thankfully when we left CT, it was just as hot so we were used to it. But, coming home to 80 degree weather was definitely a nice change!

You're right the brazos does take a little more time but it'll definitely turn out some pretty good bbq ! Happy cooking ! 😅

I will be smoking chicken quarters on my Brazos tomorrow. I have installed tuning plates all the way across and added two feet to the stack. Ready to see how it cooks that way.

@@FattysFeasts It went great. Stack side was a little hotter at first but when the smoker was at temperature the temperatures evened out pretty much. I love the Brazos.

Open your stack more to level your temperature out. 100% open with 100% open intake should be hotter on the stack side with that pit.

I typically don't touch the stack at all. I leave it completely open the entire time. Did I have it partially open at some point during this video?

It looked like it was about half closed through the middle of the video but I guess not! If you take the baffle out it’ll also help even your temps out. As it sits, the baffle doesn’t let the heat come up soon enough to heat the front side of the pit unless you really slow down the air flow with stack and intake dampers.

I would get rid of that smoker. If it can't keep temperatures alot closer together than what that's doing. That's a piece of shit design smoker

Keep in mind this was one of my earlier smoking videos. I have since done a few modifications that cost basically nothing to make this smoker run much better. Plus, for the price point, it's one of the best lower end smokers you can buy, especially for beginners.
