The secret ingredient in velveeta and in American cheese is sodium citrate. An ingredient that can be easily obtained online or Amazon so that a person can replace velveeta with pretty much any other cheese of their liking and mix with beer, milk, white wine. Whatever your heart desires. It basically allows a person to mix cheese and just about any liquid together to make a cheese sauce like the canned stuff.

Right on. It bothers me when people say American cheese isn't real cheese or call it plastic. It's literally cheddar melted down with that stuff and re chilled. Kinda like cooking a roux into your home made Mac n cheese sauce, adding an ingredient doesn't make it not real.

You can literally make pepper jack into American cheese with that stuff. I’ve seen videos of people do it deliberately when the cheese didn’t come out as smooth or moist as they wanted it to come out and was too crumbly. With that being said, sodium citrate will take Mac and cheese sauce to a whole different level as well and I’ve also made it with a roux.

I made this a little different: I used my Dutch oven to do it on the stove top, I added all the ingredients and switched out the cilantro for parsley, then I added four drops (a little can go a long way) of liquid smoke (add to your liking) to give that the smoky flavor….

Absolutely. There's a liquid smoke that might add a bit of the smoky flavor if you really want that or you can even use any regular grill with the wood coals burned down so there's not as much heat coming off. I've done brisket that way, by just searing it on both sides over a hot fire and then transferring it to the oven to cook at a low heat. Same results and I don't need to babysit the fire. 😂

For those yelling, using some kind of American cheese is ABSOLUTELY NECESSARY when making Queso unless you're adding your own emulsifiers. That smooth, gooey texture is caused by largely by sodium citrate, which is one of the primary additives in American Cheese, if you're not using American cheese then you have to add it yourself, if you don't, the cheese will break when heated resulting in an oily mess.

It's not the same. The sodium citrate is not replaceable. There is nothing else that will give cheese sauce that gooey, stick-to-the-roof-of-your-mouth mouth feel. You can get rid of the velveeta, but you'd need to add another semi-hard cheese to replace it along with a bit (idk probably a tablespoon or two) of sodium citrate.
