If you ask an Italian, tomato sauce is like pure liquid gold. Finding the best tomato sauce (passata) to use is essential when you’re preparing to cook any dish. We know you can’t always make tomato sauce at home, so I’ve taste-tested the top commercial tomato sauce brands that you can find all over the world (mostly!) so you can buy tomato sauce like an Italian.
All these brands are made in Italy with locally grown tomatoes. I am taste testing these Italian tomato sauces on KZbin by the spoonful first and then, of course, spread on my freshly made no-knead Ciabatta.

I'm glad that you approved of the Mutti Passata - it's the only one of the brands you tested that is available in the supermarket where I live. Regrettably, I tried their own brand (it was probably on sale) but it was so sour and made me promise myself that I would never buy it again. Then I tried Mutti and got a nice sauce with celery, carrot, onion, wine and the passata. Sweet and filled with flavours. There is an Italian foodstore in Stockholm, suitably named Eataly - pun definitely intended - that I will have to pay a visit and see if I can find some pasta that complies with your standards.

I have access to Cirio and Mutti here in my native Iceland, and I have almost always bought Mutti because I've been really impressed with the flavour of their products. I usually go with their tins of crushed tomatoes, they are really cheap but deliver huge on flavour. Their whole peeled San Marzano tins are excellent as well but pricier. I have not tried the passata yet but now I will! Mutti is my go-to brand if I can find it. It's becoming more widely available. I usually use the organic passata (to be honest, I started using it because it was around 500 grams which I needed instead of the 700 gram glasses of the regular ones) but I could really taste a noticeable difference when I made your tomato sauce with it or a ragú, it just tasted better.

Nice to hear that you also love La Molisana pasta. I've been using their pasta for a couple of years now, after watching a few videos where italian chefs (even some working in michelin restaurants) swore by it as a fantastic dry pasta. I bought some Barilla the other day because La Molisana wasn't stocked in the small express IGA I happened to be shopping in, and boy do I regret it. I had forgotten how inferior all the other big brands are.

As far as big commercial brands go, I'd say that Molisana, Rummo, De Cecco and Garofalo are the ones to keep an eye out for when going to the supermarket. Barilla, Divella and other orange, smooth pastas are definitely inferior. They won't kill you, but still.

Citric acid as an acidity regulator is really there to ensure consistency across batches of tomatoes. It really just means that their supply may be a little inconsistent in the amount of natural sugars, and to not have people complaining they use it to balance acid/sweet. It is in no way harmful (and it's not really a preservative), it just indicates that they may sometimes have issues with their supply chain throughout the year. You can look at it like a single malt whisky producer having to blend several years product together to get their signature flavour.
@vincenzosplate

Thank you for your educational video. I thought whatever comes from Italy is good. Luckily enough, I had Mutti in handy. I will try finding Muraca in my neighborhood. I really appreciate your strong passion and will to spread Italian ingredients with quality. Because I would be criticized and be blamed for spreading bad reputations for the big brands we, Japanese are allowed to make transactions with if I said something negative about the products of big brands. Thank you so much for your generous help.

Here in Singapore, I used to be able to find Valfrutta and Antonella brands quite readily until about a year ago at all of our Big Four supermarket chains. Valfrutta uses tomatoes, salt, acidity regulator and citric acid, while Antonella uses only tomatoes. Since then, it's only been British supermarket brands on the shelves - Tesco at first, then Morrissons, and Marks & Spencer. There's Coles, too. All of their passatas are nothing special. I loved the Antonella passata so much I decided to bottle own. I still have have a dozen of each brand, but I've got, easily, a dozen bottles of homemade passata, and about forty bottles of different tomato-based pasta sauces in my cupboards, hehehe! And, yes, I watched your passata making video for guidance! And, I agree with you, amico - homemade is always best!!!

Mutti is my favourite even though I much prefer their smashed tomatoes over their passata. Never found the other top brands here in Switzerland (I only found pomì maybe once and of course CIrio). Mutti is the most expensive brand here where I live, but it tastes very genuine and not very far from (the still unbeaten) my grand parents "pummarole" (probably the same that your nonna did, given that my grand parents lived actually next to yours in Villa Raspa). Great video my friend! Hope to see you again in person sooner or later!

Happy to hear, that MUTTI is approved by you, because this is a brand im buying. Thanks for reviewing Mutti, saw it in my store but it was cheaper than Cirio so i went with Cirio lol maybe it was just on offer or something. Since the scandal sprung up in 2016 about italian companies reselling chinese imported tomato puree and sauces as 100% italian i've been a bit cautious about trying different things. I know all of them say 100% italian but it's probably some law like they have for fruit juices where if it's over a certain % they can say it's 100%.

hi Vincenzo, Thanks for the video, ill have to switch out from using Mutti and test some of these other brands Question on when to use passata. I see all Italian's make bulk batches of passata in tomato season. What/when do you actually use it for home cooking? The only recipe I recall seeing from you using passata was in Bolognese. All of the other times you either use fresh or tinned tomatoes. The only recipe I recall seeing from you using passata was in Bolognese. Is it for when you want to "cheat" and not cook down tomato for long time?

The way I do it is plant San marzano tomatoes from seed in my small garden. I don't live in Italy but but in upstate NY. I know my tomatoes aren't going to taste as certified San marzano from Italy, so I d add a can of CENTO certified San marzano tomatoes to 3 jars of my own and a large onion and a couple or three tbsp of oregano, shallot and pepper to taste, several gloves of garlic and cook it for a half hour and it always comes out really good. The CENTO is a flavor bomb of tomatoes. Really good.
