One thing I highly suggest for sweet potatoes is boiling them on like 90c for an hour then roast - super super sweet

This is an interesting dive into what you can do with alternative starches and sugars and flours. It's vegan, sure, but there are plenty of vegan brownie recipes that don't require cassava or sweet potato. This feels more, "We're going waaaaaaay out of the box" and opens up some real potential for clever stuff.

almost certain however I've made a few batches with beetroot also that worked incredibly well (even without the flax egg)- it's the same principle of adding potato to blinis or substituting entirely

Yeah, totally. The flax seed in this recipe is just being used as a binder, there are lots of alternatives that can do the same thing. Ground chia seeds, mashed banana, pumpkin puree, and pretty much anything marketed as a vegan egg replacement will probably work.

It's not gonna be "healthy", if that's what you're asking. More fibre than a regular brownie, maybe more micronutrients, but still plenty of fat and sugar.
