I didn't get the fermentation part. Is like up to 3 days in room temperature then up to 2 week in the fridge then I can eat it , or I can eat it after 1-3 days fermenting in room temperature?

love your recipes, they are clean and simple yet flavorful. As a vegan we eat with our eyes first and it's lovely to see that your food tastes good as well as it looks.....definitely gonna try it. Just worried about the amount of salt though as I am trying to go SOS free...

Thank you! Feel free to always use a bit less salt content on any of these recipes. I tend to season things to American taste which generally tends to be saltier than other countries. 😅

Hi Chef! That looks great!😍 But i don't really get Napa cabbage here - we only get the regular, round cabbage. What would be your advice on salting procedures - how much salt and how long should it be salted? Also how long can this be stored in fridge?

Kimchi can last in the fridge indefinitely as long as it’s kept clean. As for salting regular cabbage, I would just sprinkle some salt on it and give it a mix, let it sit for a bit until some of its juices come out and create your brining liquid. then add the kimchi sauce. I would skip the water brining process for regular cabbage. Adjust seasonings and salt according to taste…

Hi! Thank you so much for this recipe, i did it a few months back and I'm still eating the kimchi with a friend i shared it with, it was so good. I add a bit more salt when I serve myself but otherwise it's so good and helps me digest! It's actually almost finished so i will have to make a new batch soon. I think there's a few things I messed up but the result was still great. I fermented it outside the fridge for a bit too long for example... Anyway. I actually have a request. Do you have (please please please) a recipe of O&G free Sriracha? I looooooove Sriracha, but since I moved away from England i just can't find any in the shops... 😭 I would be so grateful. Keep up the amazing work and thank you so much for giving us asian O&G free recipes! Hare Krishna!

Hi! Hmmm... it will be a bit tough to make traditional kimchi without Korean ingredients. There are other recipes that makes non-traditional kimchi that doesn’t require Korean ingredients. That will probably be best. It is definitely possible, but it will be a different recipe.

You can but it will taste different. Some Korean Chinese restaurants serve regular cabbage kimchi, so it definitely works as an alternative.

Depends. If you made them when Napa cabbage was in season and kept them in kimchi fridge, it can last ages. If not in season, just a few months

I'm really craving kimchi but I'm the type of ppl that got weird taste and smell after months of becoming covid free.. Now i absolutely can't stand garlic and onions and anything that has proteins like chicken and eggs...
