My Korean mother in law taught me how to make kimchi amongst other dishes. Everything you explained was almost to the T to how I was taught. Now that mom is older and can't cook, I make this and all the dishes she taught me. It's an honor for me to cook this for her. It makes my day when a batch comes out good and she says so. Thank you for teaching people this!

I have a friend who was born and raised in Seoul. Whom has been thriving here in SW Alaska. His version of Kimchi is the best I've ever had, he also pickles and ferments other vegetables to preserve them. Ive tried alot of his creations and to me they are top notch. He has one fridge dedicated to brining and fermenting.

As an African American woman I work in a Vietnamese community specifically but does include other Asian ethnicities as well and I have learned a different culture with wonderful cuisine. Hi Helen! Thanks for this video. At first I really don't eat kimchi. I'm not into fermented foods but just last year, I had a terrible severe acid reflux/GERD/bad bacteria overgrowth/ulcers, crazy gut problems. It was awful. I tried all sorts of diet and medications, been to several doctors but none helped. I was sick for months and I couldn't eat anything aside from banana and squash. All other foods would give me reactions as i developed food sensitivities too and i couldn't digest properly. Then I discovered fermented foods. I started with Milk Kefir (Fermented Milk out of milk kefir grains) and that helped me heal. Aside from that I incorporated other fermented foods like kimchi, miso soup, sauerkraut and kombucha (fermented tea) to my diet. Natural fermented foods are great source of probiotics. The good bacteria from fermented foods are essential to our gut ecosystem and can heal all sorts of gastrointestinal problems. Until now I ferment my own milk kefir and kombucha and now i will start making my own kimchi so i don't have to buy and buy and buy jars from groceries. I started to love kimchi and I eat it almost daily with my meals. Thanks a lot for this video and i hope my first batch of kimchi will turn out good 😊🙏

Korean nutritionist recommend eating like our grandparents, eating fermented foods daily. The foundation of Korean cuisine is based on fermented foods. The fermentation and tanginess of kimchi is very personal to each person/family. I personally love it at week 2 & 3. My husband loves it at week 4 when it is more tangy/fermented. I always use your recipe to make kimchi and its honestly the best kimchi I've ever had! Living in Europe though it can get difficult at times to get Korean radish especially during the pandemic. I've used kohlrabi + kohlrabi greens and even the regular spicy white radish (piccolo) that's available here everywhere as substitutions and both work amazingly. Although I have to say that kohlrabi is probably the closest in taste and texture to Korean radish. Sharing this in case anyone else has a hard time finding Korean radish ☺

Yay! This makes me so happy🙏💚🙌. As for ingredient substitutions, I list them in my written Kimchi 101 recipe (written recipe link is listed in each of KZbin video’s description box). Here you go… www.ModernPepper.com/post/kimchi As for Korean radish substitution, I recommend those small round pink/red radishes that u can easily find in supermarkets. You can use the green stems of these radishes as a substitute for YeolMu (baby radish green leaves). Daikon (Japanese radish) tends to be bitter and less mild/watery in taste. I never had kohlrabi so I can say anything about it but if u r happy with it, then pls do continue. There is more on Kimchi making tips/info on my written recipe link above.

I miss my mother's kimchi. She is no longer here and it is wonderful to watch you make kimchi like I used to see years ago when I was young. Families gathering to make the traditional batch for burying in the ground in the large kimchi urns. I miss the homemade kimchi. Kimchi made with care is kimchi at its best. Kamsa hamnida.

I have probably seen about a hundred tutorial videos to make Kimchi and this is honestly the best one. I haven't tried making it because it seems really complicated. But because of this video, I think I know Kimchi better. It has never crossed my mind before, but this certainly made me realize that Kimchi is not supposed to be made the same way. Thank-you Helen for this fantastic video. This came out so well that I'm making a second batch :) For my first batch, I followed this recipe with slight alterations and even though I messed up a bit of the process...it still came out absolutely amazing. I am now enjoying my homemade kimchi more than store-bought! I have not made the vegan version yet but looking forward to it. If anyone is on the fence about giving this a shot, definitely go for it!!

I love your tip on the sugar which speeds the fermentation. We laughed while watching you. I'm so excited as my brother loves Kim chee and will make it for him to try. Our grandmother is Korean and so we are part Korean, Chinese. Was able to visit my grandmother's home town Busan. I loved that vacation and visiting the temples in my Hanbok. I will report back my. results. We do have a Korean store where our Koreans sit at this big, big, tub to make their kimchee. Thank you for your wonderful funny videos. Your eating makes me hungry. I made the white Kimchi a few weeks back and fermented it in a gallon jar and it was fantastic. I bought the 3 gallon Kimchi Fermenter and I am going to try the spicy recipe tomorrow. I just hope mine turns out half as good as yours looks. Thank you for the great video.

Ha! I laugh with delight.Your recipe is fabulous. Only thing is, the Napa cabbage is rather hard to source here (Australia). Our local supermarket Coles actually sells but it is so old and flabby looking. I travel to get it. Then it cost $18 for one. (Good and heavy though) What!! Our other thing is I am Caucasian and my hubs Chinese. IT IS TOO HOT FOR HIM! What! We laugh.

Thank you for this beautifully detailed how-to. I went out immediately and bought a napa cabbage, gochugaru, a pear and salt-brined shrimp and made a batch. I had to use daikon though as Korean radish is not easy to source in NZ (or at least my city). The kimchi turned out great and I was surprised at how easy the process was. Honestly though, I don't think it will end up fermenting for longer than a week as we'll have gone though it by then haha.

Today I made a really delicious kimchi spread for putting on baguettes/crackers using some of the kimchi I made from Helen's recipe: I mixed kimchi and Ssamjang with cream cheese - hmm, super good 😋. And yesterday I made kimchi sundubu jjigae using the same kimchi batch - also uber delicious. Kimchi is surprisingly easy to make, and once you have it in the fridge, it's so versatile!!

Tonight picked up a glass Jar of Seoul White Kim Chi as i was told to start trying more fermented foods for health benefits. Me and my 12 year old son played Subnautica tonight and snacked on that jar and we BOTH FELL IN LOVE. I thought wow so good we should look up the health benefits and eat this all the time! Then saw your channel and watching how much you love love love the kim chi god and just your stories and just love this video and we fell in love with kimchi tonight….cant wait to go get the ingredients and start my own batch tmwr!

@@ModernPepper Quick update: It worked! Already have some bubbles and the taste is really good. Normally I have a slight garlic allergy. i hope that the fermented version doesnt irritate my immune system the same way. Fermented foods are quite spectacular in their properties.

Kimchi is one of the Best Korean Traditional Foods in South Korea. There are over 200 kinds of Kimchi, each has its unique taste and flavor!! 😍 I started making my own Kimchi at home since 2005, absolutely love it + health benefits!! GOOD LUCK😊😊

Thank you for the great instructional video! I've been a kimchi lover for over twenty years now, but I never attempted to make it myself. Your video inspired me to finally try it out. I tripled the recipe, and wow, it was a lot more work than I thought it would be, but so worth it! I have a feeling that this is going to be a lifelong passion.

My name is Trudie from South Africa! I really enjoyed your version & enjoyment to teach us! Thank you so much 👏🏻👏🏻 I love this napa cabbage, but I love to Stirfry it with onion & garlic, spices, soya sauce & use it to cook egg omelette with it! I also do it with normal cabbage! Kimchi looks so delicious, but all that chilli, I won’t be able to handle it! 🤣🤣🤗♥️
