Made this last weekend and we loved it! The bread is soo delicious, moist and flavorful. Went to buy the nutmeg and all the spices and you are right on-totally makes a difference! The tahini icing was oh so sweet and perfect. I give it a 10 out of 10 :)

This is so delicious and easy! I had some leftover pumpkin, and did the recipe as written, but added sourdough starter instead of baking powder and flour. It came out fluffy, moist and delicious. And the icing is very special and just what adds the final touch! Soooo Goooood! Thanks

Made this recipe today, and it worked wonderfully. The texture and structure are great, a proper cake. I don't miss the eggs at all. I think I'll use a simplified version of this recipe as a base for future vegan cakes, it's that good. This is indeed more of a pumpkin spice bread than a pumpkin bread, because the pumpkin is overpowered by the spices. Reminds me of the spice cakes we have in my home country. One could make a simplified version of this without the pumpkin, a spice cake. Perhaps even with a bit of orange zest.

Hey Nisha! I came across your channel recently as I’ve started to see the benefit of eliminating meat and dairy from my diet. I started having lethargy after eating and found I was really suffering from the symptoms of inclination. My joints- especially in my hands- we’re very achy and stiff. I was also having a lot of stomach and digestive issues. A coworker had converted to being vegan a few years ago after having similar symptoms and couldn’t express enough how cutting meat and fairly changed his life. All the inflammation went away almost instantly, as did his digestive issues, and he dropped almost 30 pounds without any other changes in the next few months. I have to admit- after cutting all dairy and meat for a few weeks I feel like a new person!! I’m more energetic and happy feeling and best of all, the inflammation and joint pain has disappeared along with any digestive and stomach issues. As a side note, meat and dairy is also becoming very expensive. I find that the food I’m eating now is much higher in quality but overall ends up costing less. Thanks for making these videos- they really help making the transition easier when you have a good source of quality delicious recipes at hand!!

When it comes to measuring in cups with flours or sugars you should be spooning the ingredients into the cups not dipping into the container because it makes the end product too dense

@@natalieeubank4533 Yes, and after spooning the flour in to the cup, level across the top with a knife...no rounded mound of flour on the top. Otherwise this also makes too much flour. The only dy ingredient that should be packed in, is brown sugar. Use liquid measuring for liquid ingredients!... you should be good.

Great videos, it should be known the reason for doing measurements in grams is that things like flour, sugar, etc can be packed in tight in one cup or loose both being “one cup” but one having way more (based on weight) also doing by weight can mean less things to clean up later ;)

My grocery store has a “limit one per customer” restriction on canned pumpkin. Do I use it for this recipe or save it in case I can’t get another can for Thanksgiving pumpkin pie? I'd say use it for this recipe and then do a vegan sweet potato pie. Once you do a sweet potato pie, pumpkin pie will no longer be a standard. I use the recipe from sweet potato soul...the 2nd recipe...so goooooood. Pumpkin makes the best spiced loafs.

I was hoping for less effort than roasting a sugar pumpkin but maybe I’ll be recharged by Thanksgiving (I just came off of a weekend of making non vegan freezer meals for the boys so I can focus on just vegan meals for myself, so I’m tired of cooking). In my experience, oat milk doesn’t separate into buttermilk when I add acid! soy is by far the most reliable on that count.

OMG, I'm on a pantry challenge this month (to eat as much as possible from my pantry without buying more food except to complete a recipe) - and I have had this tin of pumpkin puree for *AGES* that I haven't known how to use! I'm in the UK and I'm not a good cook, to be honest, although I think that might change because there is so much incredible vegan food out there to learn about! So now I have a great recipe to make that will use it, meaning I get to have cake not because it is fabulous (although cake is a very fabulous thing), but because it fits with my pantry challenge. I even have pistachios, maple syrup, vanilla extract and fresh nutmeg and allspice. It's like the Universe has been conspiring to bring me to this point! 😉 Thank you!
