I made this with Victoria’s Standard Keto Flour 2.0 instead of all almond flour. Turned out great and reduced the carbs by 10 g for the loaf while upping the protein and fiber. Thanks for giving us the benefit of your baking creativity, Dave!

@@brendaboysel9296 I cut the coconut flour to 2 Tbsp, as I thought that the bamboo fiber would absorb a lot of liquid, and used 126g of the keto flour. It came out nice and moist.

OMG Dave, that tree in your yard not hitting your beautiful lanai nor your fence was unbelievably lucky! I'm so glad everyone is okay but still, I can't imagine how you all must have been feeling when this hurricane hit. I live in Las Vegas, Nevada so hurricanes are not something we have had to contend with here, just extreme heat in the summers and lots of desert surrounding us. I sure do hope this will be the last one for your area. I've been praying so much for everyone dealing with these horrible hurricanes. If you want to make banana stuff without all the sugar, you can use banana extract! I found it in the baking aisle of my local supermarket and there were a ton of extracts to choose from. I actually used some in a variation of your muffin recipe and it was delicious but next time I’ll try 1 tbsp of banana and 1/2 cup of nuts next time instead of 2 tsp and 1/4 cup (I mashed your recipe with one that seemed to have a similar yield).

Hi Dave ~ I'm sorry to hear of your troubles from the hurricane. Happy to hear y'all are physically fine... tho sad y'all are still traumatized as we all are as we were hit by Milton, too! My home fared well, but my son's home next door was crushed by a huge uprooted tree. Thankfully, they were here with me throughout the storm, so are fine. Has your neighborhood changed as drastically as ours from all the downed trees? There are still mountains of branches & cut trees in front of every home. This recipe looks delicious! This was awesome!! So moist and flavorful. I added a cream cheese frosting with keto powdered sugar, butter, sour cream and vanilla. Added chopped buttered pecans on top then chilled. Yahoo...this is a keeper!!

We rented a house in Marco Island and it was our very first hurricane!thank god we were safe .Excellent house high up Impact windows generator we did good. I’m glad you and your family are OK too. Pressed cottage cheese is a thing! Twaróg, a Polish version available in many chains in Canada, including some discount stores, packs 27 grams of protein in a 125 gram serving. It comes in a shrink wrapped 500 block here. I would bet you could find it at Wegmans or most ethnic Eastern European grocers. No draining, no straining, no mess, all satisfying.

Feel your pain with the hurricane. We lost siding on our house in Helene in Clearwater. We were very lucky with only having that damage. Great recipe. Can’t wait to try it. I never knew you could make so many things with cottage cheese. Also, Dave,I finally started making my own vanilla, since it is like the price of gold anymore. It’s sooooo much cheaper to make your own with vanilla bean pods and vodka. Just add the bean pods into the vodka, and let it soak for a few weeks. Thank you for the great video and recipe🤗

I bought a large bottle of Grey Goose at Sam’s and put 6 vanilla beans in it, and it turned out great! It’s been soaking for 3 months. I was told that Ukrainian vodka was great to use, but I couldn’t find that where I live. You can find recipes for it for smaller batches and it depends on how much flavor you want it to have. Someone gave me a bottle of theirs with the Ukrainian vodka, but she only and 4 vanilla beans in it. It was too light in color and taste for me, so I added 6 beans to mine. The longer it sits, the more flavor it’ll have. It’s sooooo much cheaper than store bought! Enjoy!

WOW Dave I am so sorry to hear about the hurricane but most important you and your family are ok and no injuries...I know the damage is costly etc but its far better than injuries and other harm to your family and to you. and YES 100% canned pumpkin is pumpkin puree... also the easier way for a loaf pan is a sling that hangs over the sides or a double sling 1 length wise 1 across I usually do one and spray whatever sides don't have paper...but what you did will work fine.....Allulose does create dark spots ....LOOKS ABSOULUTLY GREAT!!!....Julianna NC...ALWAYS let Keto baked goods cool in pan for at least 15 minutes then take out of pan and cool about 10 mins before you cut (Remove paper)

It would demolished any house, but it landed perfectly between our house and the neighbors. I have been fascinated with storms ever since. Okay, to make you feel good. I tried this and have it in the oven for 40-45 minutes. I had to take it out after 3 minutes because I forgot to add the baking powder and soda. So, I took it out and stirred them in. It had only been in 3 minutes and was still cool. LOL. I'll let you know, but I thought you would like to hear my craziness.

Sorry you had damage from Milton. But glad everyone is ok. Your family was safe. I’m fortunate we live in a temperate climate in my part of Ontario 🇨🇦. We have had few doozy storms over the years that caused damage to our roof & siding. But nothing awful. And there was a terrible flood situation this past August. Too much rain in too short of time. Affected a lot of neighbourhoods, fortunately, not ours. We went through hurricane Wilma on vacation in Miami awaiting a cruise. Was horrendous. Fortunately we were ok, though our hotel was literally destroyed. I feel for anyone going through anything like that. Not just dealing with physical damage, but mental trauma. I was, and still am a big baker. I’ve never made croissants, even before my diabetes. Cause making laminated dough is very time consuming. I’ve seen some keto croissant recipes, but they haven’t appealed to me. A canary in the kitchen…you’re too funny Dave 🤪 And there’s no right way to say pecans. I say pee-cans, others pee-khans. It’s like tomato toe-mato..both work.

I guess it's ok. It is moist but I need more cinnamon and spices. It came out good. Slices still crumble to make 12 slices. I guess for me, it was not enough spices and sweetness. Glad you are ok, I find your videos full of good humour. 😉
