I cooked 2 3.5lb prime tomahawk steaks t last night on my Camp Chef SG23 with Treager Hickory, Maple and Cherry mix. The low and slow made them come out almost like prime rib. Paired with hot horseradish creme fraiche, and saluted onions with mushrooms grilled in a cast iron skillet was the best I have ever made. Thanks for this awesome tip on how to cook this wonderful meat!

Right! Low and slow w/reverse sear is the way to go. Then you get med-rare all the way thru. Not just in the center. 🤜🤛

problem with reverse sear is the sear doesn't come out as solid. You get a similar effect by turning the steak over every 30 seconds or so. And you will end up with a better sear.

if its prime meat about 120 dollars or more iv seen for some websites, choice version is about 28-38 dollars out by me in Pennsylvania at Sams club, due to the price my local butcher shops do not carry like Sams club and has to be special requested at the shops. not really worth it unless its for family i mean the bone in is for presentation really imo.

Looks good. Have you ever done any bone marrow slow smoking? AMAZING!!! Try the Kentucky Bourbon Barrel Aged Ale.... goes great with steaks.

I make a killer compound butter that includes slow smoked marrow! Marrow is a gift from the Meat Gods! I'll have to find some of that ale. Bourbon is my favorite spirit.

I have done this twice using your method. Turned out beautifully. Only issue is why do you make the most basic mistake of pushing your meat down on the bbq? I can only assume for the sear marks. Chefs are taught to never press the natural juices out of their meat. Kind of made me cringe when I saw you do that...

NAILED that cook brother. Can’t beat GrillGrates for diamond sear marks! Great fan of that product. Very impressed with the Yoder as well. Looks like it does high heat about as well, or better, than any pellet cooker out there.

After you're done letting it rest and cutting it up, doesn't that steak get cold? I like a nice hot steak, I do know you have to let it rest for the juices.

It's only resting about 5-10 minutes, max using this sort of technique, since most of the resting took place while the cooker was coming up to searing temp. Thanks for the comment!

I'll just add to Frederick that once you've allowed the steak to rest, keep the same grill you cooked on at the same high heat. Then put the steak back on for 20 to 30 seconds each side. It won't t mess with the resting process but will reheat the steak

Love the flavor of the cut. Just wish it didn't have those massive areas of fat. Still prefer a NY strip. But can't cook a steak much better than that

Great video! Once you put it on the grill grates do you do 30 seconds, twist, 30 seconds more and then flip? Also, do you live the lid open during the searing process?

Thanks for tip on flipping it at 80 degrees. I tried it tonight with a reverse sear cowboy steak and my 15 year said it was the best steak I ever made. My wife and MIL said it was the best of the summer. Great video.

I have grilled the tomahawk steak several times before I found your video and they were a total flop. The primary reason for the success to that cooking, is the smoker you used, otherwise you wouldn't be able to control the heat so perfectly with regular BBQ grill.
