Hi. If i will freeze the pata po after boiling it. Should i dehydrate the pata first before putting it in the freezer? Or should i dehydrate it in the oven while frozen?

Hi, your recipe looks amazing. I'm going to make one but what will happen if i didnt have the rice vinegar? Will the pork skin be that crispy as well? And did you stab/ or makw holes on the knuckle skin? Thankyou🙏🏻🙏🏻

You may use any vinegar. They say it might help mentain the light color of the skin. The technique is after cooking it until tender, we need to dehydrate the skin in the oven. We must use the lowest possible temperature. Once dehydrated, we may now fry it. Use hight temperature.pre-heat pan first. Enjoy cooking.

Hello Dexter.. we need to check meat during the boiling process. Dehydrating the skin in the oven seals the moisture of the meat. So when frying, lesser moisture will be released.. creating a beautiful crispy wall around it.

Yes po. Pwedeng pwede. Kung bulky at malaki yung pork hock / pata ..need lang po baliktarin from time to time para pantay ang mahkakadry ng skin. Enjoy cooking po.

Hello Babel.. The least possible heat. What we are trying to achieve in the oven is not to cook the meat further but to dehydrate the skin only.

Yiu might need to cook it a little longer po. As long as properly cooked po yung pata it will retain its crispness. Yung iba po binabalot nila ng papel.. ina-absorb po ngnpapel yung moisture from the meat. 😊

After dehydrating in the oven do you fry it right away or let it cool first

Rest it for 30mins before frying. Make sure the oil is very hot. 🙂

Pwede rin po sa turbo. You may use the "thaw" temperature for about 4 to 5 hours. Make sure na baliktarin nyo po yung pata from time to time.

Please don't leave meat out for 2 days. The driest place in you house is refrigerator. Most have almost zero percent humidity if it cold. This just dumb.
