Easy way to eat beetroots, just cut into cubes,add olive oil, season with salt, wrap in aluminum foil and bake it. So easy.

Baked beetroots with yogurt honey lemon dip, garnish with feta cheese and pistachios
Ingredients :
Beetroot
- peel and cut beetroot into cubes
Olive oil
Salt
- Wrap in aluminium foil
- Bake at 200°C/400°F for 30 minutes
Sauce:
Yogurt
Honey
Lemon zest and lemon juice
Grated fresh nutmeg
Salt
Garnish:
Feta cheese
Chopped pistachios
Parsley

I started to eat beet roots about 2 years ago . The idea came when I cooked glutinous rice to bring to Buddhist temple in NZ . In VN we can cook glutinous rice with Gac fruit to Make the rice to have Dark orange colour , but in Nz there is no Gac fruit , So I used beet root instead .
