Don't let kitchen waste exposed to open air. Always add a layer of soil over it. Ants sometimes remain in search of shelter at a dark humid and warm place.

Drying kitchen waste in sunlight doesn't convert it to a compost. It is actually done by useful bacteria present in soil naturally. You can however add that to soil for further composting.
