Once it's covered save those pellets and stick it in your oven. The smoke has already penetrated the meat so all you care about is the heat at that point.

Get a tube for cold smoking and run that grill at about 250 and you will do jut as good as that waste of money pellet smoker. Better yet find a old filling cabinet and make a charcoal/ wood smoker and enjoy

​​​@@DrFrankenschtein some say that a pellet smoker isnt real bbq. But come on, at least it isnt gas... I myself have quite good experience with a Flame Boss 400, you still need to manage the fuel yourself, but it'll regulate the airflow for you. Makes a good compromise in my opinion. Used it with a cheap bbq, lid, table at the side, adjustable coal rack, door at the front. I hope you have an image of what we had. The kind of bbq that one company in China makes in a 100 different flavors. Going to try it with a proper offset smoker though this summer.

Looks amazing. An additional important tip is to remove the butt when done smoking, wrap in foil or butcher paper, wrap in a heavy bath towel, place into an insulated cooler, and let it rest for at least half the time it took to smoke it.

You must be confusing this with a brisket. You need to let the pork rest, but not that long and you don't need to towel wrap. Just leave it in the foil you wrapped to finish it in

That’s brisket, not pork butt. Pork is around 60 minutes ideally. Unless you need to hold the pork for a later eating time. Then you can wrap and place in cooler to maintain warmth. But that isn’t a necessity, only a convenience for timing.

You shouldn't have to add liquid back. If you use a pan put a rack at the bottom to keep it out of that grease.

I've done it this way, and it comes out awesome after an hour rest. However, it tends to be dry if you're going to eat it for later days due to the big score cuts. Also, the foil on and an aluminum tray tend to take out all the juices from the pork easily. Have you tried putting butcher paper and just spreading out as you eat it? It retains a lot of moisture. Either way, that looked fantastic!👍

You use a grill and add charcoal and wood on half of the grill, the other half is the pork and you cook in indirect heat, smoke until the fire’s gone, wrap in foil and apple juice and cook the rest in the oven low temp like 275F until tender

Smoke for 4-6 hours. Wrap in aluminum foil until the interior temp is 205. Put the shoulder in a cooler for at least 1 hour and then pull. It’s so easy

"You can't over season a pork butt" I'm full blooded Cajun, so I consider myself an expert on seasoned food. But about 20 years ago, my mom took to buying her seasonings from the butcher shop. And the big bottles of pepper (black/red) don't have the cute little holes for sprinkling. They got one hole for refilling smaller shakers, and a big ass hole to fit a full ass size spoon. Moms would put all them seasonings in the pot. Some seasoning blend, all the the garlic and onion and bouillon, and whatever. But her finishing move was some extra black and red pepper just to top it off, add a little more kick. And she didn't mess around with anything less that trying to sprinkle out of the spoon hole. And damn near evey time we'd have a little oppsie. By oppsie I mean enough of either one of the peppers to season two more big ass cast iron roasters full of food on its own. One would imagine you could just spoon some of it off the top right? Nah bruh, you stir that shit in before anybody gets any dumb ideas about wasting moms hard earned pepper. Don't get me wrong neither, moms is at the top of her game. So it's always as good as you hoped. But you will burn half the taste out your mouth enjoying it. So yeah, you might not can imagine how one could over season some pork, but things work out different when you sprinkle out the spoon hole.

1-1.5 hours per pound of meat at 225, so you're committed for 7-12 hours.
