I went to France twice to visit the battlefields of my Grandfather and discovered “Le tradition”. Traditionally made wood fired baguettes are the finest bread on the world. The fine, sharp crust and flavour of the French flour is unique. A Tradition, tomato, salt and pepper and I am in heaven. I envy you French and crave your baguettes everyday. I continue my search to find something similar in Australia, but alas, only disappointment. God bless your Boulanger’s. Beautifully produced video.

I live in Philippines, and have similar issues here... But I have solved it ! Just follow two posts (both in french unfortunately), one on how to make sourdough, very easy unlike these videos that tell you that the process lasts 7 days ! the second on how to do baguettes with the sourdough... The biggest secret is in what we call in french the "TPB" or in english, "base temperature" It is a simple rulke that indicates at what temp you must prepare your dough. If you do it by hands, rule is 75 : temperature of ingredients + ambient temperature. If you use a mixer (like a kitchenaid), rule is 65 (as the dough will warm up in the bowl). Usually we play with the water temperature as it is easier than having to store the flour in the fridge... by the way, I would highly recommend to use a rectangular pizza stone for your oven, if you decide to bake breads (not only french baguettes) as this will boost your oven to quite a professional baker oven 😉 If you go for it, I bet that your friends and family will become your best customers ! he he he

I do buy the T65 from Basic Ingredients, which is great, and use pizza stones. Most of the time I make them traditionally by proving the dough over two or three days using a poolish. I am about 80% there. I struggle to get the lightness and sharp crispness of the Boulanger’s. But I persist. Thanks again. N

When I saw this video I pulled tears. I worked years in bakery and the job was already hard for 2 men with brand new natural gas oven, this man is alone and using this old oven heated with wood.

I was born in a bakery, my carousel was not a carousel on the playground, but the dough mixer (200l). Then, when I grew up, I baked bread and bakery products. A wonderfully made film, even greater skill of the poet. I cheer you up and wish you a lot of health.

The skill it takes to make such a simple thing like bread such as this boulangerie does is incredible, it's art, not just mere bread. We have an Italian style bakery in my city that's been open for 123 years, they make their bread in much the same way, but on a bit of a larger scale. Always a line out the door and it has never changed in the 25 years I've been going there.

I was in Famagusta before ocupation and before we vent to beach - we take out chicken with potatoes and veg to similar bakery on tray ready to go to oven - I can’t forget the taste of that Sundays lunches , they also use the oven heat after baking, for kleftico ( most delicious slowly cook meat ) -
