A tour of my cheese cave at Deep South Texas. It is a used dorm fridge with an external temperature controller. I am using a ST-1000 as the controller. Included are a review of the cheeses currently in the cave.

I made a cheese cave a while back and I just adjusted the thermometer that I have for some spa but it didn't work great. I guess it did for a while. But keeping the humidity high was a problem. Is our use a ripening box for? Like for brie and Camembert?

I do not control the humidity. It seems impossible to me to do that in a fridge. I do use ripening boxes until I wax or vacuum pack. 🤠

We followed your cheddar version and are going to repurpose a cooler with a cooling unit in it. Is there a preferred temp to maintain? Odd question maybe, but why the outside controller? And second not sure how to ask, but ripen cheese in a tupperware instead of wax or vacuum seal? Thank you for taking the time and making the great videos!

54 to 55 F or 12.5 C. The external controller is necessary because most refrigerators will not operate at that temperature. I usually begin ripening in Tupperware for a couple weeks. After that I need to wax or vacuum pack to keep the mold under control. 🤠

@@DeepSouthTexas It is alive! Well, bouncing from 52 to about 56F. Everyone in the house was happy to see me put the wax back up, shrug. The smaller (1.5L I think it said) cheese wheel came out of the press pretty nice, smooth and solid. Also added a jar of water in there. Do I flip the cheese wheel regularly or just leave it be for a couple of weeks (in the tup)? How long do you wait after waxed, leave setting normally? That is going to be the hard part being the first small wheel. I was thinking about a replay/repeat, but then adding some of the pepper flakes saved from the garden with the salt this time. Again, thank you for the reply and the great vids and have to ask what would you recommend for cheese to try next?

When I first started making cheese I attempted keeping the humidity high in the cheese cave. I could not. No mater what I did it would never be high enough. So now I use ripening boxes on individual cheeses if I need to develop a rind. Then either vacuum bag or wax the cheese. 🤠

I do not think it will matter. Where ever you set it, it will still turn on when the external controller turns on. Even the warmest setting on the fridge will be cooler than the temperature you are shooting for. 🤠

I like both depending on the cheese. Vacuum pack for the harder cheeses. I think wax looks better, but is more time consuming. 🤠

Ebay has ST1000s. You would need to do some wiring with this. The price of temperature controllers has dropped, so I would just buy one of them now. 🤠
