All those cheeses, amazing! They are gorgeous! Please take pictures of your cheese boards! I just told my husband I want to learn to make cheese and he reminded me we don’t have any local dairies that sell unpasteurized milk. I’m not sure if it’s legal in TN. Anyway, please keep sharing your cheese making and how you use the cheeses once aged appropriately. Thanks for sharing!😊

Look into herdshares in TN and ask around....there may be a farm nearby that you don't know about.

LOVED taking the tour with you! So many delicious looking cheeses! Cheesemaking is SO much fun!!! I have made a Tomme with goats milk, it is currently my favorite.... maybe after cows milk gouda!

I am new to your channel but you just made my heart happy now I want a cow so I can make cheese I wonder what my neighbors would think of a cow? We are a cheese family and go through about 15 to 20 pounds a month. I need to go back and watch more cheese video's.

I appreciate you clear step by step instructions. My question is about the cheese cave. How do you adjust for cooler temp of the refrigerator opposed the the cave?

Good question....I don't do any adjusting...the cheese may just take longer to mature. But it still works well, and they taste great.

Do you find you get some liquid in your bag when you vacuum seal? When you seal do you have a natural rind built up on your cheese before sealing?

Yes, sometimes I do...and I usually find it's because I haven't air dried the cheese enough prior. Sometimes I will open it, dry it out and then seal in a new bag.

You have enough on hand to meet your cheese needs? - said no one ever! Oh how I want to begin doing this. I MUST wait until I get over the garden urge - it just is too much for me to do right now. I'm 77 and maybe when I'm 80 I''ll have time. LOL There is so much I love doing, what in the whole wide world did I do before I retired? I quilted, sewed, scrapbooked, grew flowers, played with the grandkids, cooked, learned to can and preserve. Now, I mainly watch you and some others on YT and it causes me to want to do more but now I don't have time so I need to stop trying to get inspired and start doing instead of thinking. Thinking was never my strong suit. LOL I adore Havarti and use Gouda in brussel sprout casserole every Christmas. Fam fav. I was surprised that you are making all these cheeses - thought it couldn't be done at home. I promised myself to learn how to make wine this summer so I could use up all the grapes my brother has growing but nope - the heat has been TOO HIGH. I just can't take it. I'm sorry for the rant but so happy you are making and filming your cheese process. I promised myself to save these videos until I was able to do it also. So much for taking my word on that.

Mary - I'm always in awe of all that you do. We all need more time...but alas, 24 hours in a day is all God gives us. :) Just spend your time doing what makes your heart happy!

Yes! I plan on making more hard cheeses later this year. We still have about 8lbs of cheese left in our fridge from last year....so I'll use those and make more later this summer.

I am amazed.. your determination and being able to stay with this! I would love to learn if I could learn with someone… but I do t know anyone that could help “tutor” me lol you are one of few I would guess that know how to do this craft!

Can you make cheese with store bought whole milk?

Yes, absolutely. You just want to stay away from the large national brands that say "ultra pasteurized"....that milk is 'dead' with no live cultures and will not set right. Regular pasteurized works, and low pasteurization.

WOW! Thank you for the tour. I am wanting to make manchego and I have the manchego mold. When you made your manchego did you line your mold with cheesecloth? If you did line your mold with cheesecloth, how did you get back into the mold and the lines match up?

I always line my molds with cheesecloth, and the lines still appear. It's one of my favorite molds! I don't worry about them matching up. Because I only flip once or twice, and then it stays in the press for a while. It's that last, long pressing that will give you the lines and appearance.

I actually think it's quite affordable because I don't have the extra costs for taking care of a live animal.

I use raw, because that’s what I prefer. You can use store bought but stay away from ultra pasteurized.

That’s actually a REALLY good price for a gallon of raw milk. I usually see it between $12-15. Especially since regular milk is between $6-7
