Stir fry is my go to quick lunch/dinner! I like it with noodles more. Just a tip for the sauce, if you want to make it even more flavorful, you could add oyster sauce, and some sugar/honey. My go to recipe is: equal parts of each: dark soy sauce, light soy sauce, oyster sauce, rice vinegar, sesame oil, and usually a half part sugar or honey. It’s so versatile and tastes great.

Yeah you can play with the sauce a lot. Sometimes I do ketchup, soy sauce, barbecue sauce and water and it’s really tasty! Maybe some hot sauce too

OH I make it similarly! Equal parts oyster sauce, sweet chilli, some soy sauce and double that with water. Then add some coconut milk if it's too spicy. Tastes amazing.

BENGALI BREAKFAST DURING MONSOON SEASON: LONG POST I'm Indian, more specifically a Bengali. During the monsoon seasons, more particularly during holidays we Bengalis love to have KHICHURI (means mixed up). It's basically a comforting porridge of fragrant rice and pulses, spiced up with mustard oil, cumin seeds, turmeric, cumin and coriander powder, dried red chili, bay leaves and ginger paste. Of course there are variations but those are the basics. The most common is veg khichuri with carrots, tomatoes, cauliflower and peas. We accompany it with fried veggies like eggplant, riped pumpkin or even with a fried egg and when it's the season of the famous Hilsha fish (it's love ❤️), we just fry it in mustard oil for some minute untill it's golden brown and we don't need anything else to accompany the khichuri. Although you can try other fishes as well. And if you manage to find GHEE, you are welcome to add a bit of it as a topping. It's practically heaven for us Bengalis.

Add the green onions more towards the end with the chicken! Adding the onions at the same time as the rest of the veggies will cause them to get way too soft, since they’re quite delicate compared to the other veggies. Adding them towards the end helps maintain their fresh crispness while still getting rid of the oniony bite

Broccoli will give you the closest texture to the asparagus, so I'd use that. It's pretty tasty (when cooked right) but it's also expensive. As one person described it "Asparagus grows like how someone would try to prank you about how asparagus grows." It literally grows one stem out of the ground per plant, so it's super expensive to make.

Better tip, pre-make a teriyaki sauce and you can use it in so many dishes. Use it in a stir fry, add cornstarch and make beef & broccoli takeout style, marinade kebabs, use it as a dipping sauce. The real key to "cooking on a budget" is to make one meal that can be stretched out. A simple sauce is the perfect way to do this.

My favorite way to do this is cut the chicken that way, add corn starch and cooking wine and let it marinate while you cut your aromatics and vegetables. Then stir fry the chicken on as high heat as you can adding a bit of garlic, once mostly cooked removed the chicken and then fry your vegetables before removing and adding aromatics. Then add cooking wine making sure to deglaze all the flavor, some soy sauce, some sort of acid like vinegar or lime and some honey. Its so delicious. Let it cook until it thickens with the residual starch and add your meat and vegetables until meat is fully cooked

For those of us with soybean allergies : if you’re not allergic to tree nuts as well, coconut aminos are pretty good! Idk if they taste the same (I can’t eat soy, have never had soy sauce!) but it’s been a great replacement for me , I can and do still make dishes like this despite allergies :)

As an armenian I was raised with heavily seasoned stir fry and its one of our lesser known dishes, we love it and my family always eats it once a week at least
