I tried reusing the coffee in the basket for a second time once just to see how much flavour was left after the first use. The coffee was sadder than Frodo when Gandalf fell off the bridge!

I tried 18 grams with 90ml water it works good with Bialetti Brikka Induction 4 cups , but the most important having a freshly beans and good grinder using filter water . The result is amazing . Living in Cluj Napoca Highly recommend Meron or Olivo Coffee beans

In my experience I can go down to half the capacity in a Moka Pot. So you could do 3 cups in a 6 cup Moka pot pretty well. Put water in 1:10 ratio and expect approximately 2/3 of the water as the volume of coffee.

Bravo! I usually use an Aerogrind, but an Italian friend insisted that for a near-espresso experience I should use a Moka pot. Had a large one which produced poor coffee, but having seen this I invested in a small one and...bingo! Good shot of coffee. Grazie Matteo

Thanks for the comment. Yes, moka pots are supposed to be used for the capicity they hold, no less, no more. That's why in Italy at home we have different sizes of pots for different occasions

I use a one cup moka for this very reason. I only need a 30-35g shot for my flat white each moring, so using the one cup size just made sense. I use: 10g fine ground coffee (50 clicks on my Kingrider K4) 50g filtered, pre boiled water. I use a paper filter too.

Personally I have a 3 cup moka and a 6 pot moka. I almost only use my 3 cup to make the equivalent of 1 cup of espresso. I tried several grinds trying different microns with my Kingrinder K6. (90, 89, 88...etc. up to 60, or even finer still). I tried different waters. I tried this by pre-heating the water, starting cold water, starting to heat the cold water while I ground the coffee beans. I tried setting different intensities for heating. And finally as I only wanted an espresso, with my 3 cups, I tried by reducing the quantity of water. At 120-125 ml it's perfect! Then I tried different weights: 15, 16, 17... up to 20g, and I tried to go down too: 14, 13, 12,... I even tried 5 grams. (I also put a filter, but not always.) I find that 15 grams is still very strong and not necessary. Below 10g, it might be too few. So I put around 10-12 grams with 120 ml of water. (And a filter or not.) I put cold water in the moka pot and put it on medium-medium high heat while grinding the coffee. I soak the filter in lukewarm water. I place it on the upper side of the moka pot. I put my ground coffee with my K6 (between 60 and 70 microns). I close everything and wait for the coffee to brew, while scrubbing my K6 with the light brush, a toothbrush and a tissue and a little with my clean fingers. And then the coffee comes and I have 1 moka pot style espresso.

Hello Matteo, thanks for your video. Personally, I only play with the volume of water to attenuate the bitterness of an over-bodied blend (in my Moka Pot, I like dark roasts and blends of 80% Arabica 20% Robusta). By keeping the same weight of coffee (9g in a 2-cup), I can go from a pronounced bitterness with 90g of water to a very light bitterness (70g of water). Of course, the ratio goes from 1:10 to 1:7 but - to my taste - only bitterness varies.

Brewed my first coffee using moka pot the other day. It was a 6-cup pot, I put about half puck worth of coffee and a full pot of water up to the valve. Don't know how many grams I put in or got out, it was about one big cup. It was quite good, actually.. Next time I made a cup, it was about the same method but the taste wasn't that good. Don't think I'll ever go out of my way to get a single serving pot but watching your videos is interesting nonetheless. Cheers

I have E&B Lab moka pot filter and don't use a paper filter, and the coffee is amazing. I just make sure to boil low to medium heat (closer to low), and take it off the stove right before it's finished boiling all the water. That last bit will usually taste burnt, and change the taste of the entire batch. It's more work and you get less coffee, and you waste a little, but it tastes much better imo.

@@matteofromtheswamps I am hardly experimenting with the Gefu Nando 4 Cups Mokka Pot on ceran plate and your advices, especially on cappuccino, but struggling a lot with clean coffee:) At the moment it's a pain to me, maybe I like to blame the obviously outdated porlex mini ii (recommended by coffee circle, I already stabilised the burr a little:/), because only two clicks changing the results to the opposite, but at the beginning of understanding there are so many variables and the basket reducer makes it even more worse:)) Trying hard to learn faster, thanks a lot for your inspirations

When I first got my Brikka, I tried smaller doses, sometimes as small as 12 grams. The result was a wet mess and an underextracted coffee. Not sure if it works properly without filling the funnel. I have used less water than recommended to reduce the amount of water in the lower chamber after brewing. Now I just use the recommended 120ml and fill the basket.

I am in doubt between buying Bialti single cup and double cup. The amount of output in a single cup is 60 mils and in a cup 90 mils on the Bialti website, but according to your training, it is less. Please send the amount of output in these sizes. Thanks.

From my point of view the output depends a lot of, how gentle you heat it (may be much more controllable on gas). My stainless steel 220 in 120to170 out. And I like his idea of stopping the brew, so a little bit of reserve could be welcome. But I'm not very experienced

When I brew for my gf and me, I usually use the 6 cups moka, I tend to randomly variate from 25 gr to 20 gr of coffee maintaining 1:10 ratio (250 ml - 200 ml of water respectively) trying to taste the difference but honestly we can't tell. Also, I'm not sure why, but filling the coffee basket (~27 gr) implies having around 270 ml of water and that exceeds the level of the steam valve; filling the boiler (240ml) implies leaving space on the basket. So, should I change my ratio? Coffee tastes good, but maybe it can taste better.

And 130 gram water@boiler.Start with room water temp@boiler.I got 66gram of coffee.And 33.5 gram water left at boiler. In case I put 120 gram water at boiler and 17gram powder at basket, is it still ok(not over extracted)? Many thanks in advance.

Thanks for the comment. I think 18 clicks is a bit too much, grind finer, 12/14 clicks. that will give you a more gentle flow, then if it's coming to fast and aggressive, remove the pot from the stove. You should get more water out.

Unnecessary to use a paper filter, but always fill the pot properly with the best ground coffee. (Spring) Water until just under the valve and your cuppa will be perfect!

Maybe unnecessary, but i think the clarity of the resultant liquor improves the overall mouth experience..IMHO. I have brewed without the filter and I find there is a distinct difference in mouth feel. But as always, YMMV...😊

I think the Bialetti 6 cup's coffee basket is too big. If you fill it up to the brim it results in a too strong coffee to my taste. I prefer the Alessi Pulcina for many reasons (3 cups in this case) - the basket size is perfect when filled to the brim, there is never any spluttering at the end of the brew, and it comes with a heat distribution plate built-in ;-). The basket holds anywhere between 17.2 and 18 grams of coffee (depending on the kind of coffee) and results in a perfect brew with 140 grams of water. I use this "pre infusion method" where I take off the pot from the fire as soon as the first coffee comes out, then when the flow is almost gone I put the pot back on a really small fire. I no longer use my Bialetti... Years ago I did try less water and less coffee, but that doesn't give a good moka. I stopped doing that.

Who brews "less coffee???" I had a 3 cup Moka. Sold it and bought a 6 cup Moka. Currently considering selling that Moka for a 10 cup Moka! The Alessi-Sapper series Moka includes a device to split the basket in half. I tried it....ONCE. Yuck.

The video doesn't answer the question "how do I brew a softer coffee with the same amount of water?" I have a 3 cup moka, and I don't want to use less water or the amount of coffee is too small. Also I have IBS and the coffee ends up being too strong for me filling the basket to the top, so using just half of it is the better way to get a softer coffee. Probably an ideal solution would be to have smaller baskets to get different strengths.

I'm not sure I understand you correctly, but I would try a 1 cup moka pot, and if that's too strong, then easy, just add a little hot water.

Coffee in the moka pot should be brewed to achieve a balance consistent extraction. If the result is too strong, add hot water after to drop the strength, but that won't change the extraction. I'm thinking the same about the smaller basket. I'm just waiting for a company that want listen to me and develop it 😂

I try to share the coffee with another person whenever possible. Good you thought the same about the smaller basket. There's a local factory nearby where I live, I can try to contact them to make the suggestion, or even ask if they can make a custom basket for me.

That is probably because you use dark roasted coffee. That is normal, dark roast has less density so in the same volume of medium light roast, it weigh less
