My late father in law, old time dairy farmer, used to have b barrels of sand in his unheated cellar. He buried carrots, cabbages and beets in the sand. They kept well right up to spring. They were also big on making lots of sauerkraut which they canned.

They sell new handles at the HW stores. Your pitch fork looks like it is crimped on at the top. Most have a pin riveted on which hold the handle in. See at mark 4:13, on your shovel. First see if you can drill the handle out or burn the wood out in the wood furnace. Weigh time and effort against just buying a new one. It’s winter, so what else do you have to do, Kim? 😉 Or over winter the carrots. They will identify themselves again next spring with new sprouts. Dig them out then.

If you are also growing daikon radishes, you could always try pickling carrot and daikon pickles-sooo yummy! You do have some good sized carrots!.. Enjoy the fruit of your labor🥕

I've had good luck freeze drying sliced carrots. Keep them 1/4" or less and they rehydrate fine. Probably won't last more than ten years because of the sugar content. They never last more than a year anyway.🙂
