We had a busser who was famous for years after he worked with us and for the wrong reasons. Kid picks up a filet au poivre with green beans and au gratin patios (7 months after he started with us) and asks the chef in all seriousness, "is this the beet salad?". Chef wasn't even angry, just stunned. Dishwasher wasn't having it and had the busser describe every ingredient he could see on the plate, ending it with, "X are any of those beets or a salad?" Eight years later we still refer to filets as, "beet salads" unofficially.

One of my favorite soups wasn't house made. It's the Wisconsin cheese. Lol its a frozen concentrated soup from gorden frost pack lol. Add 2 cubes andc2 gallons milk and being to slow simmer. Their chicken noodle and beef veg and tomato abd French onion were all 100% made in back but that Wisconsin cheese was a pain to do from scratch and never tasted the same from person to person so they switched to premade. Everyone raved about that soup. I still buy it every so often and maked half up at a time as it makes about 3 gallons worth. We sold out every Wednesday 😅

The incorrecting of caramel is top tier. You can't argue back because "they're the chef, they know more about food". I had the head chef tell me gorgonzola wasn't a blue cheese and they have never used it on the four cheese pizza. It said gorgonzola on the menu and I've literally never heard of a non-blue gorgonzola. I guess they might have used a different blue cheese (probably dolcelatte), but they shouldn't have been.

Oh shit, the health inspector... PANIC! Not unless you're a tightass like a certain grocery retail chain is that makes food prep people do the jobs of 3 other people. Federal, state and county are the levels of food health inspections in America. Store/company level health inspectors are by company. We also had a company heath inspector come through as well who was MUCH more strict than state and county. Your health and safety are worth it! However, our "leadership" made us prepare well ahead of time for company health inspection down to scrubbing cold room fan grates. Things aren't quite as nice as they seem.
