When you open a pop can that's been shaken, there are a lot of very small bubbles in it which expand when the pressure is released, making the eruption of foam. If you tap the can first, you knock all those tiny bubbles to the surface and they pop while still in the can; then when you open it, the gas expands and leaves the can, but since it's no longer caught in bubbles, it doesn't bring any pop with it.

Design/art guy here with an additional note on the colour conversation: one thing that may be worth bearing in mind is the distinction between colour and hue. What we call a colour is a mix of hue, saturation and lightness, and where we draw lines on that spectrum to define different specific colours is largely arbitrary. Brown, for example, is just a dark and often desaturated orange, yellow, or red hue. It's likely that the parrots distinguish between colours in a similar way to us, but their brains may want to draw lines between colours in different places. Pink/red, for example, might be a notably difficult distinction - what we consider pink occupies both magenta (red+some blue) hues *and* fully red hues that have high lightness and low saturation. It's possible that Apollo may easily distinguish between red and magenta (pink) due to the hue difference, but not red and pale/light red (pink) as the difference is only saturation and lightness, or vice versa, or might make both of those distinctions from red but not inherently group magenta and pale/light red together as pink. Perception of colour is also very malleable, though, and at least in humans strongly linked to language. Where and how specifically a language draws lines between different colours directly affects how speakers of the language perceive colours and how well they can distinguish between different ones. Russian, for example, has entirely separate words for dark and light blue, with native speakers viewing them as different colours like with the English red and pink. As such, this may develop into a non-issue as time goes on and Apollo better learns and adapts to English colour distinction.

3:30 the explain when it shakes it mixes the air into the drink, those micro bubbles then go sit on the side of the can, and forms a catalyst for more gas to release from the liquid. the can is now at higher pressure and opening it allows the air to escape and the air pressure drop the bubbles expand creating more surface are for more gas to release from liquid and it cause a run away reaction. tapping the can on the top (a few flicks on the side would be better) then cause the bubbles sitting on the inside to dislodge and raise to the top, those bubbles then rejoin the air or are in contact with other bubbles instead of the liquid, this reduces the bubble to liquid contact area and deduce the surface where gas can release, the air now also on top of the liquid does not push up liquid as it expands when released, instead only air (and existing bubbles) escape simple version, tapping it moves air, air on top is better than air inside
