I still don't get how the variation in days of the month works because some months have 30 days, some have 31 days a so on.

Well with most date movements, like those in the vid, you just have to manually adjust the date if it's a month with 28, 29, or 30 days when it gets to the 1st. Fancier date complications exist on watches with annual and perpetual calendars that keep track of these month cycles. Such movements are quite expensive though.

The one that you have in the video. Also in general? Iam still new to the watch game, mostly autodidact, but I have been drinking heavily of sites and channels like yours during this lockdown so I don't have all the resources and (ins and outs of the back door). Another watchmaker told me i should buy a movement and a spec sheet, so i could deconstruct and reconstruct again and again to buils some "muscle memory". By the way, thank you for your advice and responding

I do not have a spec sheet for the Chinese DG2803. Though I agree that if you want to get into tinkering, buy some lower cost movements and spend time practicing at taking them apart and putting them back together.
