Yeah, that's kind of special food in northern China. Kaifeng is famous for lamb/beef food. Winter melon + ribs (pork) is a more typical combination in the whole China.

I don’t eat meat because I don’t want to. It may be tasty but I’m not comfortable with eating it and it makes me feel bad so I choose not to. Other people do and that’s ok. There are plenty of foods just as tasty that don’t contain meat, and I’m sure I can find some vegetable dumplings that are just as nice somewhere ☺️

They also come in vegetarian stuffings. 韭菜鸡蛋 is the most famous one. If you don't eat diary, then 面丁小白菜 is also a good choice. These are common stuffings that you can find in almost all variations of dumplings.

It brings me to tears to see the hospitality of the common Chinese people and how well foreigners are treated in China. The fact that so many of the vendors refused to take your money. Those people work incredibly hard and that is their livelihood. This is no higher form of respect I could think of that they could’ve paid to someone visiting their country.
