The breakfast place reminds of traditional Greek "patsaizidika" restaurants which offer tripe soup. often served with chili flakes and vinegar - and eaten late at night or in the small hours of the morning.

You can find Muslim food and many national-styled food at everywhere of that wonderful region of over four million square kilometers. There are a few cities of representativeness: Xi'an, Lan'zhou, Yin'chuan' , Xi'ning and Urumchi.
