We love this bread, we've been making it for years. For those who don't have a dutch oven, you can use two cake pans to create a dome and it works just as well!

I’ve been making this bread weekly for months! It’s my absolute favorite method! I will say, you can use any oven proof dish that is deep enough and put some aluminum foil on it. Also, you don’t need to proof the dough for two hours; thirty minutes is plenty! I just set it on my counter while the Dutch oven is preheating. I always make a double batch of dough that way I have one to bake right away and one to store in the fridge for mid-week. Super simple and super delicious!

@Sweet Simple Vegan You mentioned that you no longer have to buy bread with this recipe... BUT that means that this would last as long as store-bought bread in the fridge, without all the preservatives that store-bought bread has. So, can you tell me how long this lasts in the fridge before it starts to mold? And do you stick it in the fridge the day you make it?

@Julia Austin Thanks for the tips!! All I have is a big stockpot, but it says on the box that it is "oven-safe" up to 400° (I still have the box haha), so it sounds like I can use that according to you. :) What's the need for Dutch oven type pots if people have such oven-safe stock pots I wonder? Seems like it is an extra pot that isn't needed that just takes up precious space. Would you mind reading the comment I just wrote "Sweet Simple Vegan" here in this thread, and let me know your answer too?

I used a cast iron skillet and covered with foil. It came out bomb tastic. Super crunchy outside and soft interior 🥰

What a coincidence! I made this recipe today, too! I’ve had the “Artisan Bread in 5 Minutes” book for years but, I haven’t made anything from it for a few years, then today I got it out and made a loaf, and I’m wondering why I ever stopped! It’s so EASY and DELICIOUS!

Thank you so much for the recipe!!! I have a gluten allergy and I noticed that a lot of people asked if they could make w/ GF flour. I did research and found a similar recipe that uses GF flour, Xanthan Gum, Dry yeast, salt and water. Looks pretty good like your recipe :)

It will turn out a bit heavier and may not rise as well using all wholemeal flour, so I would recommend doing half and half for the best result. One tip I saw someone do once was to sift their wholemeal flour into the bowl that you're putting your ingredients in so that you retain the husk from the wholemeal flour, and then you can sprinkle this on top of the dough before letting it rise and prior to baking it. You get a lovely sprinkling of texture from the reserved husk then which adds another dimension to the taste, and doesn't require any additional ingredients, just uses a different way of dispersing it into the dough. Try it and let me know what you think! :)

So I made this recipe exactly, using gourmet truffle salt and cooking it in my Pirex, and it turned out PERFECT. Nice quantity of air holes, good consistency and crunchy brown exterior. The only thing is that the inside of the bread doesn’t have much flavor, tastes like flour and water. What can I put in this to create a bit more of a sourdough flavor, or even a honey flavor? And if I add something to accomplish that, should I take out an equal quantity of water away?

So Southern Custom Equestrian Products ive never done this with gluten free flour but I don’t think it can be swapped 1:1- i think the best option is to find a gluten free specific recipe to guarantee success!

I'd try it with the Bob's Red Mill 1:1 flour in the blue bag. You might need to add some baking powder but it should be pretty close. Just add the water slowly. I wouldn't use coconut flour. It is too dry and won't cook up well

Add a tablespoon of vinegar or lemon juice to liquid. It predigests it and makes it tolerable to those sensitive to gluten

Great video I wonder if I can do this with my sourdough starter instead of using yeast from the store. I bet the dutch oven makes a difference, every time I've made bread I've used a silicone loaf pan preheated in the oven. I'll buy a dutch oven just for this purpose. I am making thisk kind of bread all the time in an oven in a pizza pan. I also love to make buns from that dough - they are delicious and you just put them on a parchment paper on the oven rack

What are the conversions of grams to cups? Your recipe has grams. I've been trying to use online conversion calculators and get a different number on each website. I've had one calculator tell me that 440 grams is 3 and a half cups, but another website say that it is 1.85 cups. Pretty sure I now have a big bowl of trash on my kitchen counter because it isn't the right measurements. Please help!

I grew up with multiple Dutch pots in the house. I think we have every size lol #JamaicanAF that reggae song “Pass the dutchy pon the left hand side” is really about those pots. I might just try this & never buy bread again! 🤔

They didn't tell you that your house has to be 72 degrees. The original recipe they base theirs off of gives more specific instructions. And you can use a glass baking dish. Orig recipe also says you can let it rise for 24 hours if necessary. Three times and mine didn't rise. I'll try again in late spring when it's warmer. Orig recipe is cited in SSV blog post.

I don’t use one at all...just put it on a pan with some parchment. If you want a crunchier crust put a pan or bowl of water below the bread so it creates steam. Easy peasy lemon squeezy!

T Eye it makes the bread more dense and less fluffy. I like to do 50/50 wheat and all purpose. But flour is so cheap that it’s a great recipe to experiment with!

So, the LeCrueset knob can handle the heat? When I’ve made this sort of recipe, it baked at 450 and I have read that the LeCrueset standard black knobs are only safe to 450 and I was scared to try it.

Help! Made this for the first time today, and the top is beautiful but the bottom burned. Used a Dutch oven and cooked according to directions. Actually only cooked for 8 minutes after uncovering, so I’m not sure what happened.

no Sugar ? I'm not into sugar as in the amounts they use in Commercial Bakeries., But I do use 1 tsp of unrefined demerara sugar and I have my loaf complete in 1 1/2 hours, I bake a no knead whole meal/wheat loaf , I need the natural bran 🙂

I’ve made this recipe a few times and the last 2 batches have smelled rotten by the next morning, after leaving it to rise overnight. I think 2 hours for each rise would be plenty.

The original recipe this recipe is based off of doesn't require a Dutch over. You can use Pyrex.

Bread looks awesome but what's the actual reason you don't recommend cutting it before it cools? Sure, fresh baked cool or cold bread is great but if it's still warm, it's unbeatable!

More details from the original recipe this is based off of, linked on their blog. I made it twice and it didnt rise either time . Their "room temperature" actually means, per the original recipe, 72 degrees F. My house is not that warm in the winter. Also, the orig recipe has more instructions for length of rise time.

You have no idea how many people use oils in their ingredients. It's in everything these days. Cannot thank you enough for doing it without any oils!
