Hi Starry! Thank you a zillion times over for this recipe! it has been so successful for me, I've shared it many times over with family and friends!! BTW, this DOES work with GREEK yogurt...somehow I missed that you said that the first time, so when shopping for my yogurt in the store, I purchased the Honey GREEK GODS brand, specifically because it had 7 beneficial live and active cultures...and it worked fabulously! The cupful I set aside from my own batch made from it also continues to work great as my starter. Just thought I'd let you know, because the higher number of active cultures the better, I would assume!

Great method! I use hot water-filled cooler to hold jars at correct temperature (110°-120°) for 4 or 5 hours. Before filling cooler with hot tap water, I fill and cap quart jars with boiling water to sanitize. These jars are used to place in coolers to displace the exact right amount of water so eventually the yogurt-filled jars will be in the warm-water bath at about the 3/4 height. Then I inoculate all four quarts while milk is still in the pot as it cools to 120°, with one cup of yogurt and a couple tablespoons of vanilla extract. Then I empty water out of quart jars - fill up quart jars with inoculated milk, and place the jars in cooler with 120° water. It holds the temperature for 4 or 5 hours, while it sets, after which I let cool for a couple of hours on counter. Then refrigerate. It keeps for 4-5 weeks in fridge.

To make Greek yogurt, strain plain yogurt. I use a coffee filter. Keep the whey -- the liquid -- to start your next batch of yogurt. The whey is full of yogurt bacteria and will start yogurt as easily as yogurt itself. A word of caution: I have had problems making yogurt when I switched brands of milk. Using the whey from one brand to start yogurt on a different brand results in 'broken' yogurt -- yogurt floating on a pool of whey.

I've been making yogurt this way for years! Love it. I use a 1 gallon ice tea jar and make a whole gallon at a time using 1 container of yogurt as a start so mine takes 24 hours to thicken in a cooler to contain the warmth. I wonder though... I have always used greek yogurt... why did you say not to? When I used regular yogurt I ended up with a much thinner end result.

I have been making yogurt since I was 11 now I am 44 still turn a gallon of milk into yogurt a week. I never had measurements. When my mother taught me it went like this make sure you have two clean pots, bring the milk to a boil, then pour the milk into a clean pots check the milk in about 30 minutes if you can put your pinky finger in and not burn yourself it's time to add the start ( yogurt from last week's batch) stir place lid cover with two old bath towels, refrigerat in the morning ( taste better cold ) lol that is how I have taught my kids now I have actual measurements.

What I do is make two bottles of water hot and cover them. I warm the whole milk and cream (yogurt LOVES cream and you will have a much nicer finished product). Add a teaspoon of yogurt; mix, cover, and put into a tiny cooler with a hot water bottle on each side. Within 24 hours or less, you have a nice thick yogurt.

The end bowl looked delicious and if the dog ate it it is good. Even though dogs eat the most terrible things in nature if you try to give them food that is not good, for example, sausages they wont eat it. The cheap sausages dogs wont eat and I have also stopped buying that for over 10 years.

Tips and comments: --Calibrate your thermometers with both boiling water and ice water to see how accurate they are. Mine is 10 degrees off at the high end. --Heating the milk to 180 degrees is needed to denature certain proteins in the milk, not to kill bacteria in the milk. Your yogurt will be much thinner if you do not denature those proteins. --The starter culture is very important. Pick the brand with the consistency you want. I use a certain brand of Greek yogurt after having trouble with a more expensive organic brand that was too runny for me. My yogurt "sets up" with skim, 2%, and whole milk, just like in this video. --Less is better for starter culture. 1-2 tbs per quart. More may curdle your yogurt and make it tart quicker. A longer "curing" time " with less starter culture is better for flavor and smooth texture. --120 degrees is safe for adding starter if you are going to get the temperature down quickly (cold containers, poor insulation, etc). I add my starter to the big pot of milk, not the individual containers. I strain my cultured milk into my containers to keep out pieces of the bottom scum, which usually forms when not using a double boiler. --I use 24oz plastic yogurt/cottage cheese containers instead of jars...because I had them already. I ruined a batch of yogurt trying to use new Rubbermaid microwave/dishwasher safe storage containers (Tupperware type). The yogurt reeked of plastic --so beware. --The oven method is very easy (it is a big super-insulated box)--do not rely on the over light for temp control--it may or may not maintain temp. After putting my yogurt in the oven (I can stack my recycled yogurt containers two high--no towel or blanket needed) I put in one or two gallon milk jugs full of hot tap water to maintain temperature. My tap water comes out at 110 degrees and will still be 95-100 degrees six hours later in the oven. You can briefly preheat the oven to warm it up on cold days, but check to make sure it does not get above your target temp. -If your final product texture is grainy or "curdy" you used too much starter and/or kept it too warm for too long. Add raisins/granola and stir it up before serving and your snooty guests won't notice. --Yogurt should be set in 4-6 hours at 110>>90 degrees. Letting it sit longer will make it more tart.

Hello I found your channel a little over a week a go. I have watched almost half of your videos. I could not wait to try this out and was able to the other day. The yogurt was very good. I checked it at about 4.5 hours and it was set. I also learned you can set the yogurt up in a cheese cloth or 100% cotton cloth and drain out most of the whey which makes the yogurt thicker and creamier. I went blackberry pickin with my son the other day and we have been mixin them in the yogurt it was so much better the the stuff you would buy at the store. Anyways I have learned a lot from the videos and think it is great that your husband is so supportive of what you are doin and will even be the camera man or be filmed doin demonstrations for your videos. Last thing for now but not lest. I really enjoy how you are just keeping it real with what you guys are doing and love how you have your passages and what not threw out and at the end of your videos. I think my brother and myself are goin to be trying the Garden of Eden in some of your gardens. He has a really beautiful aquaponics garden where his fish make nitrates and then nitrites and feed his plants. Well I have to go for now nice channel and keep up the great work God Bless You All

Starry Hilder Good mornin guys. I will have to say I didn't get very much whey either and the yogurt at the bottom of my canning jar was thicker then that at the top. But there was a big difference in the thickness before and after drain out what there was and then adding the Black Berries. So yeah I keep the whey as I understand there is a lot of protein and what not in it. I am goin to be makin some bread in the next few days and will use what I have in replacement of the water. Well anyways thanks again for the best yogurt ever.

You mentioned about using regular yogurt over Greek yogurt as a starter. Why won't Greek work? Does it have something to do with whey?

Starry, I am wondering how you keep your milk, eggs, yogurt, etc, cool. Do you run a small refrigerator on solar? I know you're not a fan of freezers. Thanks!
