This comments for anyone that actually wants to try this recipie: My mother and I never made a cheesecake before and wanted to try it out. We followed this recipe almost exactly( even the strawbeery sauce). Just wanted to say it came out DELICIOUS! Literally an easy and perfect cheesecake. The only thing we didnt include was the creme fraiche because we didnt have any but we used sour cream instead and it was just fine. The strawberry sauce was my favorite part to make so easy and holy crap it was so delicious! We even made some extra sauce for pancakes :) This recipe is great and literally anyone can make this.

I’ve made this recipe a couple times and and each time it tasted velvety smooth and delicious. I did notice a couple things to watch out for though. I whisked the cornstarch with other ingredients first to prevent as much clumping as possible. Sour cream or greek yogurt works just fine as a substitute for creme fraiche. But most important of all, foil your pan carefully. If there’s the smallest crack waster and steam will go in and make your crust all soggy. You can seal it with an oven safe bag but be sure take it off once it comes out of the oven because it’ll create a lot of condensation.

This is almost identical to the recipe I've been using for like 15 years, and the really cool thing about it is that you can super easily easily change the flavor into anything you want by omitting the sugar and replacing it with the sweetened flavoring of your choice, like a sweetened ganache for chocolate, any flavor of fruit coulis you can imagine, pumpkin pie filling, peanut butter, etc. Another protip is that you can get a chocolate crust by replacing the graham crumbs and sugar with finely crushed oreos.

A few tips to share that can simplify and foolproof your cheesecake: 1. I make mine WITHOUT a water bath because of the hassle and risk of water running into our springform a few times. To bake a cheesecake without a water bath AND prevent cracking, make sure all your ingredients are at room temperature, especially the cream cheese. When all ingredients are room temp, you can bake the cheesecake in the oven just like that. 175C for about 1hr or until it's slightly jiggly in the middle. 2. My recipe consist of creamcheese, sugar, eggs, vanilla and sprinkle of salt. Even without creme fraiche, sour cream, or heavy cream, it can still taste really delicious and always turn out perfect! Give it a go! 3. Make sure to mix your batter thoroughly and constantly scraping the sides to avoid lumps. Happy Baking!

So! I made this today. Unfortunately the store I went to didn’t have Crème fraîche so I subbed sour cream for it. Still a great recipe nonetheless. Today was a practice round and I will be making it again on Tuesday. That’s when I will use Crème fraîche. I’ll post an update. For anyone intimidated by it, don’t be.. it’s a perfect recipe. I used a whisk instead of a hand mixer but my cream cheese had been thoroughly softened at room temp. The custard is smooth as heck and is so delicious. It’s not too sweet and still has a cheesy bite. Very delicious. My family fell in love with it and is requesting it for the holidays now. Just a note when it comes to cheesecake, be patient. If you pull it out of the oven immediately there is supposedly to be a bit of a wobble in the middle since it is still cooking while it cools. You didn’t under bake your cake! Follow the cooking directions exactly and you’ll be fine. Once cooled and set in the fridge, the result is a smooth delicious cake! I high recommend this recipe.

Especially when you go the extra mile and cover it with fruit. I've tried other cheesecake recipes that were to die for, but I'll always keep this recipe. Joshua, I made this yesterday! I'm from NYC and I miss NY cheesecake so very much. I cook and bake but had never tried a cheesecake. I looked at a lot of different recipes but in the end went with yours. This is the best NYC cheesecake I've ever had. It's thick and dense and creamy. Slight note of vanilla and a tiny bit of tang that it needs. This is one of the best things I've ever baked. Thank you.

The Greeks did, in fact, create one of the first "cheesecake". It was a goats cheese cream-ish cheese, like marscapone, on a toasted, honey sweetened crum. I had one inspired by this in Rome, it was delicious but nothing like modern cheesecake.

I used this video to make my very first cheesecake and it turned out 100% delicious. The only thing I did differently when I made it a second time was use half the kosher salt in the crust. I'm not used to the taste of kosher salt so it was a bit salty for me, but not in a terrible 'I can't eat this' way. Thank you so very much Joshua!

Small baking tip for anyone who’s gonna make this but if you take a skewer and run it through the batter not stabbing into the crust but a good swipe through the entire cheesecake, it’ll help break up the really large bubbles that come to the surface so you’ll have a smoother top :)

I love cheesecake and although I grew up on Sara Lee cheesecake I've made my own for years now. The only thing I do differently is to mix up about a cup of sour cream add a couple tablespoons of sugar and pour it over the finished cheese cake and let it set while gently cooling the cheesecake in the oven. Great method and technique.

Idk if anyone else would want to try this, but my dad has made cheesecake for as long as I’ve been alive. The best tip he could ever give you is to use ricotta instead of cream cheese. It makes it significantly airier and creamier. The flavour is also better than if you used plain boring cream cheese.

hey Josh!!I know this recipe was posted for a while now...but i made a cheesecake, inspired by yours, with a 1/3 of sheep cheese instead. In Portugal we often pair creamy sheep cheese (DOP serra da estrela) with pumpkin jam as a dessert...so I rechaped the recipe and it became a hit at our restaurant....thank you so much!!!! Next time you are in a creative desert for your recipes....visit the "francesinha" portuguese sandwich. It's a classic but I admit, it could use some improvement...take care..

I haven't made a New York cheesecake but I have made cappuccino cheesecake multiple times. Found the recipe in a Christmas cookbook and loved it. Chocolate crust, coffee middle with a sweetened sour cream top layer.

Just make this with some small alterations (lemon rind and juice to the cake mix, more butter in the crust mix) and it was amazing. cheers josh for the inspiration

Can you teach us how to make Kaiserschmarren? It's a German dessert which is basically like a pancake but it's sliced up and served with a vanilla sauce. The thing is, how do they make it so "cronchy"??? Also, this cheesecake video is elite. Thank you.

This was a lot easier than the home made buns lol. It came out fantastic, exactly what i imagined. Im going to make another with strawberries from a local strawberry farm instead of store bought in two weeks when they are ready to be picked.

Hands down one of the best and easiest methods. Many over complicate it, this is just the right type of ingredients…I can go without the topping as I don’t want me cheese cake ruined with slip on top, but to each their own.
