Whoa, fab! I have lots of ramen recipes for the home cook, but your version here is just great. Goes over all kinds of deeper-mystery topics like miso types, fermented bean paste, an easier chasu, fresh noodles. Yet is still geared to the idea of "easier". With all that miso, bean paste, ground pork, buying canned broth is just fine for at home. Thanks so much 😊

For ramen noodles: you can also buy "fresh" noodles in these 200g packages, take 90s to cook. It's pretty much the perfect size for one serving. And having made chashu and marinated eggs recently, I cannot believe that I didn't think to use the chashu cooking liquid for the eggs afterwards. Though I would add like a tablespoon of honey to it before using it for the eggs for some extra sweetness. That liquid can then used as tare the next day as well.

For those that have spaghetti handy, but not ramen noodles specifically, you can sort of replicate the ramen noodle texture by adding 1 tbsp baking soda per quart of water, and boiling a couple mins longer than package instructions. It makes the noodles chewier, and it's a handy trick for lazy people like me that prefer to keep spaghetti as a staple but not necessarily ramen noodles.

I do mine with the dry ramen because kids(& always have them in the Pantry) I use Powdered Stock(Pork) & always have Pickled Ginger(you can buy it from the Supermarket) with it! Speaking of Pork Belly I went to a "Wholesale Butcher" yesterday & they had "discount" Pork Belly for $22/kg!

Those aren't ramen types particularly, shio (salt) and shoyu (soy sauce) are two types of tare, and miso is another. Tare are densely flavoured, usually bursting at the seams with umami, and are added to the broth which is often very plain. Tonkotsu is a broth type. Nevertheless, can tell this is delicious (and as a person that prepares ramen over three days at home can always appreciate a quick ramen).

Eh, make a tare a day before. It changes the flavor drastically and makes it insanely complex and rich, and you don't have to make a too complicated one even though using 4 types of miso in it is superior to using 2 types.

In regards to the video freeze. The 4 main types are: Shio (salt based broth), Shoryu (Soy sauce based broth), Tonkotsu (Pork bone based broth), and probably Miso (Miso based broth). Shio and Shoryu are all over Japan. Tonkotsu is a specialty of Fukuoka, and Miso is a specialty of Hokkaido.

Still a few tricky to source ingredients, and the addition of corn which comes out the same way it goes in. This is one of those recipes that works on scale, otherwise it's like a €50 bowl of ramen.

Ramen is Japanese, not Chinese. Also you didn't look very far because his previous video were tacos and they are a Mexican dish and 2 videos before that he did pasta dishes.
