"room temperature butter" has always been hard for me. We live in NY and in December, room temperature is usually 65-68°. Butter doesn't get really soft sitting out. What temp is the room for most people?

These will last for 3 days in an airtight container at room temperature. Let the icing set before storing in the fridge. I suggest you place wax paper in between stacks so they don’t stick together.

Yes, you can use whole wheat flour for this. But you may need to adjust the amount of wet ingredients as flours do not absorb liquids / wet ingredients the same way. Add gradually and stop when it reaches the same consistency as shown in the video. I hope this helps.
