Something I learned about how even Shion in the LN can manipulate reality through physical contact right after Rimiru becomes a Demon Lord. Her Gourmet skill let's her alter something to take on the properties she desires like poorly made food tasting good or someone able to live as a block of flesh without dying or feeling pain (she actually did this).

It's not Gourmet. Gourmet is Geld's skill. Shion's skill which she uses to manipulate reality with is master chef. She can essentially change the outcome of what an attack can be by manipulating the opponents durability.
