It is usually busy. Mostly because he remembers you. When I went to the University, he would remember my order and ask "you want your usual?" Hell yeah I want my usual.

The circle is a symbol of perfection. This calm businessman went "full circle" with his thinking in order to get what he needed. Instead of getting upset or giving up. The word he puts behind being a chef is really real!

I love buying food directly from a solo owner/operator. Smart guy to do it all by himself. The expenses are lower so profit can come quicker. Yeah, you can tell that chef would have some awesome sandwiches! I bet if you tasted one it would have all sorts of amazing flavors happening.

If you can justify a week long venture (busy summer beach town, w/ a July 4th teeming with bi-peds), would the legal costs hinder the potential profits? I'm talking wheel barrow operation with proper chill unit and sanitation protocols all on site---...

I admire this gentleman and love the idea of an entrepreneur series but I agree with the others, the audio is absolutely horrible. The mic is too close to the shooter and the subject's audio is just awful. I hope you continue this series and wish you much success so that you can afford a better recording setup.
