I made this yesterday following your method & it turned out beautifully, so thank you very much! I will be making some little boxes to give away as I had a lot of quince - the only thing I think I will do is toss the cubes in a little powdered sugar like Turkish delight to stop them sticking. Thank you so much for your wonderful recipe. I'm cooking it now as I'm typing this comment. We have a Quince tree and have only made jam but now we have this terrific option. By the way, do you know if we can we freeze the paste? Thank you!

I tried my first batch. I lived in Portugal years ago and my husband was addicted to it. This recipe is much easier than what my cooked tried. She used too much water. I rescued it and made the paste like you. I will use the excess water in smoothies. Now going to harvest more to freeze for winter recipes.

@@maureennelson4513 How wonderful. We went ahead and froze our blocks of paste. We just made another huge batch of the recipe but instead of cooking it again after we put it in the blender, we left it as the silky smooth spread to put in cakes, pastries, bread, etc. I'm going to make my first cake with the quince filling. It's going to be amazing.

Glad you liked the recipe... I did not tried to freeze it but it keeps in the fridge for a very very long time - months....
