Ingredients for the dough:
Round metal form: 5 cm in diameter
Eggs: 2 pieces
Salt: 5 g
Sugar: 65 g
Flour: 45 g
Cocoa powder: 15 g
Baking powder: 5 g
Ingredients for the cream:
Cream cheese: 300 g
Vanilla: a pinch
Powdered sugar: 75 g
33% fat cream: 150 ml
Dark chocolate: 50 g
Water: 20 ml
Gelatin: 5 g
Ingredients for the chocolate glaze:
Dark chocolate: 120 g
Silicone hemisphere mold
Preparation:
Dough preparation:
Preheat the oven to 170°C.
Prepare the baking form: Line it with parchment paper.
Mix the dry ingredients: flour, cocoa powder, and baking powder.
Beat the eggs with salt and sugar until the mixture is pale and fluffy.
Carefully add the dry ingredients to the egg mixture and stir until smooth.
Pour the batter into the form and smooth it out.
Bake the batter for 15 minutes or until done (check with a toothpick - it should come out clean).
Let the dough cool.
Cream preparation:
Soak the gelatin in water and let it swell.
Melt the chocolate in a water bath or in the microwave.
Beat the cream cheese with vanilla and powdered sugar until smooth.
Heat the swollen gelatin until completely dissolved and add it to the cream cheese.
Gradually beat in the cream until a thick cream forms.
Add the melted chocolate and stir well.
Assembly of the mini cakes:
Melt the dark chocolate in a water bath or in the microwave.
Brush the silicone hemisphere molds with the melted chocolate, using a brush to evenly coat the inside of the molds.
Place the molds in the refrigerator for a few minutes to allow the chocolate to harden.
Fill the molds with the cream, almost to the top.
Cut out round pieces from the cooled dough using the metal form (5 cm in diameter).
Place the cut-out dough pieces on top of the cream in the hemisphere molds and press lightly so that they form the base of the mini cakes.
Finishing:
Chill the mini cakes in the refrigerator until the cream sets.
Carefully remove the mini cakes from the silicone molds, making sure the chocolate shell remains intact.
