I can't tell if she's cooking is a different style than my friends back home, but seeing these and seeing there's different regions that makes sense. Back home I enjoyed stuff like laarb and the asian curries. Dried fish, etc

I asked her if she'd cook for me and she said yes but even her son won't eat her cooking, so I don't know what to take from that. lol She's given us some nice like, I dunno how to describe it but like Filipino spaghetti? The wife couldn't stomach it but I am used to the SE asian spices, but there also a ton more I could not identify. Filipino cooking is an amazing and different take on our normal dishes, but I wanna try some true stuff.

Lao food is my absolute favorite cuisine of all time. I put it above Thai food, Vietnamese food, and even Chinese food. Its so fresh, bursting with flavor and uniqueness. Love the spiciness, sour, sweet, salty, and bitterness. It just pairs so good with sticky rice. Whats even better than the food is the Lao culture and way of life which is so friendly and laid back. Although I am Hmong, I believe in my past life, I was Lao. I was born in Laos and only went back to visit after 30 years, and I fell in love with Laos. Laos will always have a special place in my heart forever, like a first love that you can never forget regardless of how much time passes by.

Finally a video of my favorite food. I experienced Laos food in Pakse, Savannaket, Vientiane and Luang Prabang when working there over fifty years ago and still love it. I was lucky to have went to lao five years ago. Absolutely the freshest and most delicious food I have had in any asian country. Fresh green peppercorn sauce. The jeow and bbq. Lord knows I ate well. No fast food in sight. Was glorious 😁

Having lived in south and north Laos, and now in the capital, I can definitely say the food is different. Like Noi from Doi Ka Noi, mentioned, though, that not every Laotian is eating sticky rice. My family in law is from Phongsaly and from the Phunoi tribe. They eat mostly steamed rice, less spicy, and less fish sauce. Drinking tea is also more popular in the northern provinces. Having said that I know plenty of Lao people who will only eat sticky rice, and only consume steamed rice if there's no other option. Personally I love the great noodle soups starting with the 3 k's (kao soi, kao poon, kao piak sen). Those are a very important part of Lao food culture.

I'm glad you addressed that, as it sounded from the start that someone saying that Lao food is similar throughout the nation sounded dubious. A Lao person & a Thai one I met online stated there are at least 2 kinds of regional Lao stuff with Upper & Lower Lao being the major likethings/examples, not including those of the native & national minorities

Indonesian here. 🙋♂️ I have only been to Laos a few times so I wouldn't say I am familiar with the cuisine. One thing I can say is that I love that they like to eat their meals with sticky rice because as an Indonesian, I consider sticky rice either as a dessert or a special dish that you eat once in a while.

Beautiful! Beautiful! Folks; PLEASE go to Laos, you will not regret. Love it!! Been from Laung Prabang down to the bottom of Champensak. And yes, the grilling of everything and the smokiness is really part of the taste all over. I think Gary Butler actually DID go all the way up to the Thai/Laos border for a bowl of Lao Khao Soi. (I've had it in Vientiane too and.....yeah.) Waiting for you lovely OTR people to do the Khao Soi episode, It's just a matter of time. The Lao version, the Lanna Thai and the Myanmar Khao Swe are all part of that story. Love Noi! And the coincidence of having the #2 promoter of Laos culture right there after a long road trip! When I visited Luang Prabang, I had dinner at a nice restaurant popular with tourists serving Lao food and it was lovely. At a nearby table there were two Thai tourists who appeared unimpressed with the menu. They asked the waiter "Hey do you have live oysters?". Like sure land-locked Lao is famous for live seafood.

Thai people are spoiled with good seafood from their own country. Also, the food service industry had a lot more time to mature in Thailand. In that sense, Laos cannot really compare, as a landlocked country, with only a fraction of the population and tourists. However, most Thai tourists who visit Laos, come for the food, to savour special dishes, not found in Thailand. In Thai guides you often see restaurants recommended, overlooked by western tourists.

Lao to Thai speaker is more or less like Irish or Scottish to an American. I'm partially Laos descended Thai grown up in the central Thailand and I speak almost no Lao and probably came out strange if I try. But I perfectly understand Lao. Some of my friends struggle to understand some words.

I saw the news on the BBC today that Hamas released five Thai hostages from Gaza. I checked Perplexity and found that 30,000 Thais are working in agriculture sector in Israel, and most of the people are Isan Thai. I didn't realize there were so many Thai people there. As such, there are many Isan Thai/ Lao restaurants in Tel Aviv and Jerusalem. Happy to see that the Thais are able to go home. I wish peace for the people of Israel and Palestine.

So much nostalgia. I lived in Laos for three years, and this took me back. Phakhao Lao was one of my faves, glad to see it survived COVID. Wonder if Tip Khao also survived. Your video made me understand the options at Doi Ka Noi better, so inspirational the work and research the chef owner Noi has made. Lao cuisine broadly summarised: very much the base that a lot revolves around is the glutinous rice. Denser and heavier, it creates a pleasing bolus / mouth-feel when gluing together disparate ingredients - watery sauces, spongy meat at one end to harder items such as nuts, crispy edges to the meat and grated / raw vegetables. Lao food has been spectacularly requisitioned for this. Although the chef mentions Lao cuisine lacks the richness of coconut milk as in Thai cuisine, it gets its creaminess instead from the dense rice, offset by the sharper aromatic dishes it accompanies. Take these dishes on their own and they're a flavour explosion that might be a bit much in series, combine it with the rice and it melts beautifully. Lao also combines what the chef humbly refers to as 'rustic' flavour (read: natural eg barbecued meats, fresh, raw veg and herbs, nuts) but also a panoply of complex sauces full of herbs, fermentation, spices and stock, the kind that SE Asia is famed for. This is why Lao food is one of the world's best despite thinking itself so humble, sourcing from a jungle that has less available protein than the desert, but over thousands of years has honed what it can into a masterpiece. It manages to keep natural flavours, while also adding to them. There are two types of cuisine -one that keeps the natural flavours (celebrated in Greek, French, Spanish, Argentine, Japanese, Cantonese) and those that add to them (think Indian, Szechuan, Thai, Wu, Malaysian). Lao straddles both (along with Turkish, Vietnamese, Peruvian, Mexican). A good nod to what makes great civilisations is not so much what they lacked, but what they leant into and overcame. Think of the world's driest regions lacking wood (no navies) and water -Mesopotamia, Egypt, Persia, the Indus, the jungle empires with scarce protein that were still able to build the world's largest ancient cities or structures -Angkor, Burma, Siam, southern India, the Aztecs, Inca (the latter of which didn't even use the wheel, which although they had them, lacked any species of livestock to pull). The Chinese who lacked potassium in the soil so the horses were weak, and couldn't have cavalries against the armies of the Steppes (Jurchens, Mongols, Manchus), instead building great walls, inventing gunpowder weaponry and machinery, blast furnaces and set off trade routes. Laos has done the same to its cuisine.

I love sticky rice with all the jeow options. I also feel that just like the cuisines of my Eastern European roots, a signature flavor in many Lao dishes is dill. I wonder if that is why I love Lao food so much. Lao food is also the spiciest food I've ever eaten in terms of chili heat. They don't hold back on the hot fresh chilis. They say bo phet bo sap, if it's not spicy it's not good.

Yes, that is very true about the usage of dill in Lao and Eastern European food! I used to work in Kazakhstan, a former Soviet Union state. There was a lot of influence from Russia, Ukraine, and other Eastern European countries, and dill was in many dishes - salad, soup, and others.

Good EP. As Thai, we know and very much accept these are Laos food (sometimes ISAAN which translate to Northeast because those area literally North East of central Thailand, including Laos. Because Lao foods also served in Thai restaurant Internationally as Isaan food make people outside Thailand think it is Thai food.

very meaningful n marvelous contents of real lao foods.. left laos in 1975 with my parents n reside in the U.S.A... loves to go back n couldn't cuz i am a Vang... not the right time to travel back to laos.. getting older n loves to see laos again b4 my time... thnx for the vid!!!! good job

@@Go4Broke247 very true 10s of thousands of hmong american inclunding the Vang have been back to visit laos, but i am difference from these hmong Vang... i do have couple lao friends in vientiane. they will takes care of me only in vientiane, not in other provinces! thnx for the feedback n the wife n i with two other white couples will takes our jet to thailand then we'll cross over to vientiane without the jet for a few days in laos this coming summer.
